About getting trailers, they are expensive and there are alot of different types. I would recommend holding off on getting any trailers until you have at least one Garage. I think its not possible to get a trailer until you have a garage in the first place.

Also not having your engine on while your filling is because old crank form cars were open valve systems so when you would gas it you'd pour straight into the engine basically into a tank below the main engine so if it was one you had a open fire going straight into your gas and the pump so it would often explode(please don't quote me on this that's just what a old relative who collects crank cars told me)

Also, next time you guys level up and use skill points you should make sure you have at least one of everything because the first level unlocks that sort of job (ex: lvl 1 in fragile cargo will unlock fragile cargo as missions you can do) and the rest of the levels just increase how much money you make from said jobs

Yea sorry Ryan they didn't have vigilante modes in GTA 5. But in GTA 3 and even 4 I think, you could play as a Taxi driver or drive an ambulance and even put out fires driving a fire truck I also want to say in 3 you could play as a cop if you got a police car.
