Thank you for this. It is fascinating for me. My Italian Great Grandfather's Ancestry was from Milano via Sicily. He immigrated to America in early 1870s. He purchased his ranch in my community on August 23, 1880 which I've now inherited. I'm now the 4th generation owner. The one story passed down to me was he always insisted that Raviolis be served for every Christmas Eve dinner. I continued on with that tradition this past Christmas. The 143rd year doing that in my community. I also have the family ragu recipe and methodology. I'm glad to see her use Carrots and Celery. Our secret ingredient is plenty of Nutmeg, which I have a sneaky feeling is her's too 😊

Have to say that the Celery looked really fresh and Green with so many leaves on the top. In the USA you can hardly ever get that nice of Celery in the Super Market. Glad that you showed the individual shops that you can buy specific things in his hometown. Usually the food you get in those shops are much better than the normal Grocery store Meats and Produce. Really enjoyed the vide as it is always interesting to see how people live in different parts of the world.

The celery and carrots are not part of Lasagna specifically, but they're ingredients that make the soffritto (sautéed?) in which you will cook the ragù meat. My mom does it too, I just don't care if the soffritto is just onions or the full onion-celery-carrots trio... 😅
