Be aware that if you buy spelt flour, the flour is probably sifted and may have some added. Typically, bran and germ are sifted out, which contain nutrients that the body needs. Some mills add substances to improve baking ability, perhaps ascorbic acid. Then you want to be sure to get all the nutrients in spelt, if you use freshly milled, unsifted flour from spelled kernels.

I feel like leaving it overnight would be too long (as yeast proofs very quickly) but I also baked it without *any* proofing, so I'm not 100% sure. LOL. It is just my guess that that would be too long. Maybe proof it in the fridge if you need to leave this overnight? That's what I do with sourdough. I will report back after trying! Thanks so much!
@LetsEatPlants10 ай бұрын
That's a great question as I used to wonder the exact same thing! I have found most of the yeasts work pretty similarly.. I think the main difference is just to let regular yeast "bloom" first, meaning letting it sit for around 5-10 minutes with some water and the sweetener you're using until it's foamy, then add the rest of the ingredients. Hope that helps!
