There is a saying “Shoburey Meoa pholey” in Bengali, that is “ Patience is bitter, but its fruit is sweet! ” The same applies to 'meoa' or Kheer making process! We need the patience to make Kheer / meoa/ mawa. Presenting The Traditional Bengali style Kheer making recipe! Kheer or Meoa is sweet from the Bengal region. It is a sweet, dessert item from Bengali cuisine as well as also used as the main ingredient of many other sweets, especially used for the filling for sweets like Pitha, Patisapta, Labango Latika, etc! In North India, Kheer refers to Payasam or Rice pudding. But in Bengal, Kheer is different. Traditional Kheer is also different from Khoa kheer. Bengali style Kheer refers to reduced and evaporated milk, sweetened with sugar and thickened slightly with a little amount of refined flour.
