With only eight counter seats, Sushi Anaba is one of the hardest-to-snag reservations in Copenhagen. Chef Mads Battefeld trained in Tokyo before opening his own sushi restaurant in Nordhavn. The omakase primarily features sustainable seafood from Denmark and Norway - not only is it the best sushi we’ve had in Scandinavia, it’s the best omakase we’ve had in our entire life. Natural wine and sake are both available.

This is incredible! I loved watching him talk through his whole process! Was curious about the dark color of the rice until Chef Battefeld explained the vinegar he uses. And then coming full circle of it reminding him of rye bread!! LOVE THIS

How I wish I was born in Denmark so I would be close to Noma, Alchemist, Geranium, Sushi Anaba and lots of great restaurants 🤤

I’m naturally biased to abstract and zen designs. So this is a great video. Now im craving sushi. Well done (both sincerely and sarcastically because now im hungry)

It is funny how long Japanese people think you need to work at a craft to be an expert. Meanwhile Europeans go there for a year or two and come back ready to open a restaurant.
