I found out about him 11 years ago through a Bocuse D'or documentary I was watching, where I believe the US team got 10th. I searched to see who got 1st, and it was Rasmus Kofoed from Denmark. One day, I hope to be able to go to Denmark and dine at Geranium. One of the very few Michelin restaurants I want to experience.

This is a lovely video! Although you have had chefs explaining certain dishes in prior videos, I really enjoy how this is starting to take more of a center stage, so to say, because it really adds an extra dimension to what we are seeing in front of us which in this case is some of the most exquisitely presented food I have ever seen in my life!!! Not only that, but seeing chefs being truly honest about the direction they may wish to take their restaurant in is quite refreshing. While this is their right, all too often we see chefs acting as though this knowledge is some sort of secret when, in reality, Chef Rasmus himself explained that even he doesn’t truly know for sure where his heart will lead him in the future when it comes to his cooking. I think my favorite dishes had to be among the desserts, particularly the pumpkin one. I love how the cloudberry’s bracing acidity hopefully doesn’t dominate the dish but, instead, ideally balanced the earthy sweetness of the pumpkin and the gentle caramel warmth of the crisp. In all, beautifully done! I look forward to the next one!!!

if u ask 90 percent of the folks on the street would they care to eat such a menu, without informing them of anything else that might influence their opinions like 3 star Michelin or whatnot.....they would probably say no....are u kidding me?iv seen more delicious foods and meals in those asmr cooking videos in the jungle and wildlife and the streets of asia and south east asia than this garbage.... but of course if u want ur 3 michelin stars, u want ur food to be seen "bourgeiosie" or "haute couture" or high society or whatever u have to go in a certain direction......the chef have to claim their personalities and who they are always follow a certain mold......theres always duck consomme in the menu....caviar.......truffes sprinkled and olive oil drizzled on everything......little bite size of god knows what......u have to aspire towards veganism.......u have to suddenly develop a taste for snails and cockles and parsley snips laid upon a english water cracker.....everything has to resemble either fish eggs or sago seeds like its squirrel food for squirrel people.....the food resembles almost like a more refined more high class couture version of IKEA food court....u can almost sense the same creativity and energy kofoed just like the sveland people put into their furniture and living room experience. and at michelin 3 star reastaurants,they are not serving u food but rather an experience, that is if u were walking down a supermarket and having a 9 course meal of samples handed to you.... chynese from asia but not from chyna.....OUT!!!!!!

10:26 oh wow, I’m happy to know that they use Flair58 Manual Espresso Maker (the one with the black color) which I always use it everyday to have a good cup of espresso based drink. It’s a great tool, definitely worth it, Geranium use it and u know what it means. 👍

i have recently been on 2 michelin kitchen Ikoyi in london and they use shit oven UNOX and etc... it didnt stop them from making amazing things. so i would say u can achieve amazing results with so so equipment! :) but it is very nice to have this idea in mind that u have the best equipment - then u can clearly see that if you made bad drink thats your fault not machines :))

As long as noma is open in its current format it’s will always be the best “ restaurant “ in the world . I know there’s more delicious food in other restaurants but no one tops noma for excitement , originality , atmosphere or tension and it is always delicious . I say tension because of the sheer expectation that noma as restaurant brings , that sheer energy is felt everywhere , I’ve eaten more wholesome delicious food but the experience across the board is unparalleled . That’s just my opinion but we are talking restaurants and not just the food

Maybe I'm just spoilt, but I've been to ALOT of Michelin star places plus worked in a fair few and after a while they lose their appeal. Don't get me wrong, these chefs are geniuses in their own right, but to quote Marco White '' I don't want to go to a canapé party, i want to get stuck in ''. These days i'd much rather go to a great restaurant without all the theatre. Id much rather go to an amazing Texan BBQ places like snows bbq, or an amazing pizzeria like lucalis, or incredible street food in Mumbai. These are the places that get me excited and want to travel for, not these 'clever for the sake of it' overpriced restaurants chasing the Michelin guides approval. I'm glad you had a great time though, because that's what matters in the end.

I agree they lose their luster if you do too many back to back, and there’s times i’d rather a humble diner or a texas bbq, but I do think its worth going every once in a while to get flavors, flavor combinations and cooking tecniques you’ll never get anywhere else. Of course, if you worked at these places you could probably just make this stuff yourself, in which case its not worth. The restaurants always going to have better sourced ingredients but i’d consider sourcing to be low on the list of what makes fine dining restaurants good - the caviar, black truffle, and foie gras courses are always the most boring ones anyway

Its nice to try unique things every once in a while, but paying hundreds to eat a course that includes tree moss ( i seem to remember Noma had something like this ) or Rene Redzeppis signature dish 'cook your own egg in hay oil on a bed of hay' its just kinda silly. I guess as i get older im just not following the beat of michelins drum anymore and prefer the humble over the scientific and aethetically pleasing art on a plate.

Luckily, you can enjoy both! Or at least we do. And yes, there are good and bad fine dining restaurants, just like there are good and bad BBQ. Geranium is definitely on the good side of the spectrum.

Completely agree, but is it perhaps because the chefs themselves loose interest after doing it the 'easy' way for years...which is usually just as good -if not better in ultimate taste- but just doesn't look as nice. Or is it because of the whole 'theatre' and 'Michelin stars' surrounding it? I know my parents went to the Librije in the Netherlands a few years back (3 stars), and didn't enjoy it as much as expected. It's in some ways a bit like Blumenthal in respect of how much you can still recognize the food

For me, it makes sense to get meat out of the menu...going to a restaurant like this would feel like going to an Art exhibition. I think "meat", no matter how well is cooked, how perfect the taste, beautiful presented on the plate...has a history of violence. it's in our human nature, true...but the word for THIS is "pure". This is food for the soul, and if you close your eyes and try to identify all those flavours...for the mind also. Matisse comes to my mind. Never have I ever felt so philistine watching this video with a bag of chips near me...

We always write the price in the caption. For this meal, it was 3200 DKK ($430) for the food per person.

Great vidéo as usual. With the exclusivity of having the chef participating ; very enjoyable. This said, i d like to have your opinion on something. For me, The 50s bests is a scam guide based on random picked restaurants (mainly by "who is making noise these days"), instead of using a fair and objective evaluation. Ranks move from top to bottom in a year because, there is not even enough place within the 50s to reflect the huge offer worldwide. Therefore my question is the following one : Do you think this list has a value and what is, in your opinion, the best notation system curently referencing restaurants and their level of cooking? Trying to rank all the restaurants in the world is an impossible task, and for us, it's not really about the exact order and more about shining a light on some of the most exciting restaurants out there. Why would they pick restaurants at random? And what would the scam be? You can agree or disagree, but it's just the opinion of 1000 voters.

@@andersandkaitlin Thank you for your answer. I said random, because none of the 1000 voters has tried all the restaurants. Thus, with no true comparison in mind, how do they even decide who's the best? I think, as you mentionned, that this guide is indeed a projector, but its lightning is a bit abitrary. Also, I was truely interested knowing more about your selection process ; what are your favorite guides, sites, etc... you're using to pick restaurants. If i sounded irritating in the previous comment, I apologies for it. You're doing a fantastic job on this channel, in both short and long videos ;)

@@ZeeheCorporationNo problem, I was just trying to understand your input. I still disagree that it’s random. While few of the voters have tried all the restaurants on the list, it’s still their collective vote. It’s not like all Michelin inspector have tried all Michelin restaurants either, so it’s kinda the same for all these guides. If you want recommendations that are guaranteed to have been tried and approved by the same people, then our blog is a good place to start. The con, of course, is that we haven’t managed to eat absolutely everwhere yet, seeing as we’re just two people. 😊 We decide where to go using a mix of guides and recommendations: Michelin, World’s 50 Best, local foodies/bloggers, but most importantly these days, we trust recommendations from members of our own food community, The Hungries.

@@andersandkaitlin I will check you Patreon then. I don't work for the Michelin guide, but I like their more general idea of proposing places to go, who (most of the time) reach a certain strandard of quality. In the end, yes, it remains the choice of few inspectors! Living in France, I hope to visit someday some of the wonderfull danish restaurants you'de come to present, during a trip. The Danes are so honest and straightforward, there food is magnificent, not sure i would spend a lot on a meal, for me I know I would leave hungry , living art which you eat, not for me

Why do you assume that you would leave hungry? Because the dishes look small? They serve you more than 20 of them and the menu is perfectly designed to make you feel full/satisfied afterward. If anything, you get too full, actually.

@@andersandkaitlin The Emperor Has No clothes. The restaurants in Denmark including this restaurant, are overrated with excessive publicity. I do not know if there is such a thing as the city with the best restaurants in the world. But if there is such a thing, then in my opinion the leading cities are Brussels Barcelona or Tokyo.
