You sprinkle table salt and table sugar on the salmon for curing and rinse it off in tap water then soak or clean it in iced water with rice vinegar ? Please correct me if I m wrong.

Another channel’s video suggested you cut the outer layer off after curing process, though he first soaked in salt, then vinegar/ice water, then freeze over 1-2 days. Do you ever cut off excess layers?
