I asked my Amish friends how they can potatoes. They said rinse the potatoes after peeling several times until water is clear. She said you’re rinsing off the starch when you do that. Now I can potatoes that way raw and they always come out beautiful in the jar. No starch setting in bottom of jar and perfect white.

I made this recipe from the book but my problem with it was the equal distribution of ingredients. So now I share out the meat directly into the jars after browning so I can make sure they are equal and proceed with the recipe with the remaining ingredients in the pot and then fill the jars.

When I was younger I was helping my momma cut up celery for her roast, my brother came in a hugged me and told me he loved the smell of my perfume... I told him I didn't have any perfume on and held my hand in his face and he smiled and said that's the smell. We laughed so hard. Momma said if all a girl has to do is rub a stalk of celery on her neck and he'd love her forever. Lol!!!

I did a batch a few weeks ago, and it has been a HUGE hit. I bought a roast today to make much more, and it will be a staple in our house! It is an awesome, shelf-stable meal that is so satisfying to eat. It just doesn’t get any better than this. And I WILL order many more ForJars lids because they are also awesome! I am canning every week now, and Hubs is so proud to see the collection grow. Even after almost 56 years of marriage, he looks at me with such respect and admiration for doing this again after a long time not doing it. It’s really gratifying. Today I canned 7 pints of chicken bone broth, too.

Given that beef takes much longer than vegetables to cook / get tender (generally speaking), how do the vegies turn out with these all-in-one pressure canning recipes?.........do they have the consistency you want? Asking as pressure canning (from what I've read and seen) usually takes 90 minutes plus cool down time....say 2 hours+.....that length of time turns most vegies into mush with most normal cooktop or oven baked recipes.

We spent the weekend making strawberry jam, not so ugly chicken, ulgy pork butt and your chicken soup, we did blanch the veggies as directed. Yeah, we're on our way to stocking a Pantry. Oh - and add a little mushroom powder to the gravy when you make it to make it a little deeper, too! That looks fanastic!!!

I did something similar in 2022. I used all raw garden onion, raw carrots, & raw potato and then used raw cubed beef, but use what protein you have. I didn't have time to brown my beef, so I put about a cup of each item in the quart jar. I think I added a teaspoon of salt in each and some pepper along with dried thyme. Filled the jar with hot beef broth (plain water works too) to a inch headspace. Processed at 15 pounds for 90 min as I am in Alberta Canada. I just recently opened a jar and it was awesome! So quick and convenient! I will do more of these next year for sure!! I am going to try a recipe similar to this one too.

I made some of this last year. This Sunday my mom came over for lunch. I used a can of my beef stew along with a can of my green beans. Made some homemade bread and it was a delicious easy meal!

Leisa, honestly you do a great job talking while you’re doing all the chopping and work. I could not EVER talk continuously while doing a recipe. My brain is not highly evolved enough to do both at same time. You’re a marvel.

One of my favourite parts of canning is hearing that ka-chunk as the chunks fall into the canning jar when filling! This is now my absolute favourite stew! I never liked the idea of packing raw meat into the jar for the 'other' stews so I always hesitated making them. Then I found this and WOW! It tastes like homemade Irish stew. I'm making another big batch tonight and working towards a lot of this on my shelves. (My fast-food-and-good-for-you shelves.) When I give some away (and the recipients almost have to pry it out of my hands), I attach a little bag containing 2 tsp of beef bisto and 1 tbsp of cornstarch mixed together with a little tag on it telling them how to mix in the slurry for thickening. I love having you guide us through these recipes!!! Thanks!

Can't wait to try this one. My son and grandson built me incredible shelves in the pantry today. I laughed when I realized I was thinking about you when I moved my 'shrooms. 🤣 They will hold over 400 qt jars about 100 1/2 gallons and room under for the 5 gal buckets.

I tried this recipe yesterday. My hubby loves beef stew. He absolutely loved this batch of stew. I had to run my canner twice to can everything. I ended up with 7 quarts and 7 pints. I made the mistake of not using For Jars lids, I used kerr lids and one of the pints failed. So hubby had it for lunch today. He has requested more stew being canned. Thank you for showing us the recipe.

This would make a great beef pot pie. .make the gravy maybe add some peas and fill a pie crust or use philo dough as the crust.

Yes it’s great for that I Put it in casserole dish and put a pastry crust on top. I also do it with dumplings it’s very versatile.

I think we all get so stoked to see the glorious jars come out of our canner! I just did 7 qts if chicken soup and it was beautiful. Into the pantry it went for later. My stores are growing and that makes me so happy. I'm planning and prepping for myself and my daughter with 5 children. I have lots of food to stock and I'm loving it! Love your videos too. You are so fun to watch and even as an experienced canner, I learn from you every time. Keep em coming!

When I go to re-heat, pour the liquid into the pot first; add porcini mushroom powder, tarragon, a little milk or cream mixed with corn starch and bring to simmer (thickening). Then add solids and simmer again. (Tarragon is an ingredient in béarnaise sauce and really goes great with beef)

I pressure canned this a few months ago and we love it, when I heat this up I add a small can of mushroom gravy over it and serve with some biscuits, it is one of our favorite meals. There is only two of us and 1 quart feeds us both at a meal, sometimes I will add green beans on the side.

Hi Lisa! I just wanted you to know I just discovered your channel 2 days ago and I absolutely love your videos. I been binge-watching for 2 days LOL... Thank you for all the info you share with us. I have been pressure canning for about 6 yrs now. Just started using mylar bags and oxygen absorbers for dried goods. I'm fixing to order me some "forjars" lids thanks to u. This makes me so happy. I'm from Tennessee and during COVID it was EXTREMELY HARD to find lids. I went to Ball's website and ordered 100 wide and 100 reg mouth at a really GREAT DEAL! Then they came in the were NOT Ball ... They who ever they were tricked me! These lids were JUNK! I had no choice but to use them cause we couldn't figure out how to return them. I must say when I would do a canning session I would have 1-2 jars to fail ALWAYS, it's just sickening to lose one much less two. For the past I'd say two months now I have been finding Kerr and Ball lids and buying them. But now these "Forjars" look even better than Kerr and Ball! Oh and I'm also gonna buy the pump vacuum sealer from them as well. .... A GREAT BIG THANK YOU FOR ALL YOU DO! ❤️❤️

My husband loves beef stew. In fact it’s on my list to can this week. I love your knife. Nice and sharp. Mine need sharpened. My mom would always say “ I could ride to Pittsburgh on this knife” if hers was dull. Strange saying. But I’ll never forget her saying that.

The stew looks beautiful. I was in publishing before my second career and I want to thank you for adhering to copyright laws, I know of a couple people whom have actually published cookbooks with copyrighted recipes they are selling as there own, I am not telling but nice to see someone who appreciated others hard work and probably understands the price you would pay. Also a little trick I learned from a chef, when you put the liquid in a pan and thicken it, if you make a paste out of equal parts of flour and butter and use it to thicken the liquid you get no clumping and a nice flavor, just use a one to one ratio with softened butter and make a paste and whisk it into warm, even hot liquid. Also works good if you made a gravy or sauce and did not get it thick enough. Let us know how it turned out.

I love to cook, but my wife banished me to my outdoor kitchen to do it. I can all sorts of meats, but one thing I do first is cube it up into large cubes and give it a quick blazing sear on my charcoal Weber grill. The meat is still raw on the inside when I take it off, but the quick sear just adds that extra flavor. I don’t do it in the oven like I used to. My wife prefers just canned meat, but I really love stew and may just make a batch for me.😊😊 Thanks for the recipe!

I have the Bernardin version of this Ball book. The cover is identical but the ingredients in the jars themselves are arranged slightly different. It's too funny!! Becky, I hadn't pressure canned until I found this channel. Leisa has given me the courage I need and she explains everything. There are a lot of rebel canners out there so I am glad for you to have found a canner that goes "by the book". I trust what she says. Not blindly, but I've learned she won't stir us wrong... There are videos on this channel for beginners. Then try something. Always follow the steps. Good luck and happy canning...

"Am I a man because I did not read all the directions?" Hmmm. Couple of things to think on. ?WHAT are you canning. HOW much (bulk/deals?), in any session? I went straight for the meat, things I can't get off the shelf at the store. THINGS I LEARNED. ■■Cold pack [ RAW ], go LEAN! ex.-got 20# frozen turkey breast @ restaurant supply. made 12 qts in broth. tastes fab; mixed up meatloaf, in widemouth, also fab, and broken up is great in cottage pie! ((BIG FAT CAP on this because 73/27 was what I had.)) Also canned kielbasa links, in weak broth, they busted their seams a bit. but will be absolutely yummm with cabbage and mash pots. I did try hot dogs & Johnsonvilles Beddar Cheddar sausages, only 1 pkg each. They don't look as nice. And I have not yet tested them. ■■Hot pack--any ground meat, skim the fat, but need some for reheat and adding flavorings. SO VERSATILE! Imagine the non-cook doing Snoopy happy dance for the time saver.

I sure hope you are getting your neck fixed at the end of summer...crossing fingers and toes for you. It has been a few years but I've made that beef stew and it is delicious. I should go deep diving in the chest freezer and pull out some roasts to make another batch thanks to your inspiration, Leisa. That canning jar is so cute...at first I thought it was Bormioli Rocco because they've made that shape in the past. It was surprising to see Leifheit on the jar, I had no idea they made canning jars. I have a cookie press that brand that we bought a million years ago in Germany. As far as I know, that company always made very high quality goods. Your stew looks crazy good!

I just cooked a chuck roast with mushrooms tonight. I cooked it like Rose Red cooked sirloin and mushroom gravey for canning with less gravey. My chuck roast was on sale for 2.97. I bought a ton and was super lucky because it is super tender.

Hi Leisa, I love home canned beef stew! Meals in a jar. I like to put parsnips in mine; it gives it a heartier flavor. I haven't made any in the last 2 years. I make all my soups, stews and chili in the winter because it helps to heat the house. This winter I'll be making chili, beef stew, and stuffed pepper soup. I'll add the rice to the stuffed pepper soup when I open it and warm it up. It's soooo good. Plus every fall I cut up my peppers from the garden and freeze them for making recipes.

oh my land! I just canned up a pork stew, shredded pork, pork and peppers and pork with sweet and sour sauce! Kroger had pork butt for 97 cents a pound! I got 4 huge pork butts (between 15 & 17 pounds each) and canned it up 4 different ways. I like to hit the meat sales Hard! I'm super happy!

Leisa, there is a tested and approved raw pack recipe in the new Ball book with the blue(ish) cover. They just call it pot roast in a jar instead of beef stew. It's in their "easy one jar recipe" section.

@@twospooked yes, because it is pressure canned it doesn't rely on the acidity of the red wine for safety. It's just for taste. You could use beef broth instead.

I used this beef stew recipe on Tuesday. Trying to preserve food in case of lost power due to Hurricaine Ian. This is a great canning recipe. I have 4 quart jars and they are beautiful. Can't wait to give it a try. Thank you for sharing. I love your site!

I made beef stew, seasoned it, put it in the slow cooker, then used a small amount of Perma-Flo as my thickener and jarred them up. So far so good.

I'm on my way to stocking my pantry and finally canned for the first time this weekend. I chose potatoes - 33 pounds gave me 27 quarts. Later this week I will try the strawberry banana jam and then this weekend I will be doing beef stew. I know it's dependent on how much I can and how big my family is (5 to 10 people on any given day), but what would you estimate is a good goal to strive for on stocking up on lids for a year. I just ordered 200 using your link and code. My MIL just picked some up for me from some Mennonites in TN so I am slowly getting them. Too many is better than not enough but I have no idea what I should try for. Thanks for all of your videos. I've learned so much from you.

been doing pork and turkey so will be trying this beef looks so good our electric goes out a lot and i agree its nice to take out of a jar and heat it up and i dont have to worry about losing my freezer had that happen before after i just filled it and the elec was out a week keep the recipes rolling

There is a beef stew recipe in my old tattered Ball Book. Very similar to your recipe. I think I will try it. Beef stew is a very practical thing to have on hand. who doesn't like the winning combination of tender beef, potatoes and carrots?👍 I love that German jar also. Looking on the internet you can see jars from other countries at a high price but I have found such at thrift stores cheap. I recently found a pint jar with French writing on it I only paid $2. When I came home I looked on the internet and discovered it was a limited edition, old and was going for $50 on Ebay! I am afraid to can with it now and use it as a water glass.

You could pour the contents through a strainer, then thicken the broth and put the solids back in. It would be good in a pie dish with a biscuit top. Question: The broth that was made from cooking the beef, could you strain it and use it in the stew?

I'll bet your kitchen smells amazing! I remember mom's beef stew as a favorite meal when I was kid. Whenever I heard the pressure cooker going when I came home from school I knew we were having beef stew for dinner. It was so good. I might try this recipe when I am more comfortable with canning. Thanks for sharing this video.

I put kidney in with mine it’s so good. I’m English we always like steak and kidney, the flavour is at a higher level with adding kidney.

We love beef stew. Unfortunately I have never canned and am afraid to. Maybe I’ll will someday but I’m almost 80 not sure it’s a good idea. I do enjoy watching you can your food

Hiiiii... I found this recipe in the book called "Ball Blue Book of Preserving", page 61. I bought this book and a Water bath canner years ago at Ace Hardware. It says, This home canning guide was 1st published in 19 0 9. I never got to use it until until this summer.
