I use almost the same recipe..Use beer instead soda water, also add a pinch of cinnamon. Use a small amount of butter in the pan for each pancake and same after flipping..This additional butter creates a crispy edge..This is an old Flemish recipe.. Being in the USA I love to eat these "crepes" with Blueberries and Maple Syrup..(forget the calorie count, just be happy) ...

Cast iron or black carbon steel is vastly superior to nonstick, and if the pan is well-seasoned and nice and hot, it releases perfectly without adding butter each time.

Watching the pancakes being made reminded me of my grandmother who came to America in 1917 from Oland. We had them frequently. She taught my mom, my mom taught me. They have quite a life through time. I often had them with grape jelly. Cast iron pan. My grandmother had a very old cast iron pan that made five or six small one's at the same time.

Can wait to try your recipe! Swedish pancakes are a favorite and wonderful memories of younger days commercial fishing on the Fairweather grounds in the gulf of Alaska. You would have passed through there before Cross Sound and Elfin Cove. Anyhow when weather would come in we would anchor in Lituya Bay until it cleared and one of the older fisherman, a close family friend of swedish descent would feed us swedish pancakes till our bellies hurt, literally.

Great recipe thank you. I don't sail but being Australian, we love our pancakes, we make English style which is slightly thicker than crepes. Its funny how the first pancake being a flop is pretty universal it seems. I was surprised to hear you generally have the same experience. Toppings, my favourite is lemon juice and white or raw sugar. Scatter plenty of sugar over the surface then gradually dribble lemon juice all over the pancake giving time for most of it to soak into the sugar the roll up the pancake like a cigar and eat it like that, making sure to crimp and turn the end furthest from your mouth so you don't lose all the lemon juice and liquid sugar. Its Yum.

I grew up having pancakes every Sunday morning cooked by my father. He learned from his mother. who was born on the ship immigrating from Sweden. They were made with sour milk, sometimes the milk was so chunky, it had to be shuck out of the bottle, but they were the best I've ever eaten. I've tried making them myself, but they're not the same. I think they're missing dad's love.

Add pinch of sugar & Vanilla Extract for sweet pancakes. Or add salt for savoury pancakes... Do you freeze you milk on your long crossings?

The whipped cream is optional. It is just as traditional to eat without. Toppings can be pretty much any fresh, frozen or preserved fruit or berries. Lingonberry jam, apple sauce or defrosted strawberries was especially common in my family. One time our local store was selling "ruined" apricot preserves at like 1/10th the price. Apparently the manufacturer had messed up on the thickener part and the preserves were basically apricot soup. While too runny to use for anything else it tasted amazing as a pancake topping A small amount of sugar is also common, in addition to the fruit topping. Some pancake recipes actually add the sugar to the batter but I always have the problem of the mix sticking to the pan if I do that. So I just sprinkle it on after.
