Please check below for cooking ideas
RECIPE
Put sweet corn on baking pan, bake them for 30 minutes with 250℃.
Peel the skin off, then grill sweet corn surface, putting soy sauce spray on them. Shave off sweet corn kernel.
Put half amount of cream per sweet corn amount. Put them Paco jet container, then put them blast freezer.
Pacorize them twice.
Take them out. After melt them, add 6% of PROESPUMA HOT (SOSA), mix well with hand blender.
Put them in Espuma bottle, fill the gas

Hi. It is to crush frozen foods using a cooking device called Paco Jet. It will have a very smooth texture. Please check below en.m.wikipedia.org/wiki/Pacojet

What if i dont have proespuma? Is it possible to switch it with something else or take off?

Thank you for your comment. Espuma creates a soft texture. I think it is good to puree with a food blender.

Why not make a smooth corn mix by steaming the corn first and then using a nutribullet to blend the mix with cream?

Called “pacotizing” in the Wikipedia. It is a machine that finely grinds frozen foods. The following is from Wikipedia Its precision blade spins downward with an exact movement at 2,000 rpm, shaving a micro-thin layer off the top of the block of deep-frozen ingredients. This process is called 'pacotizing'

Pacorize means using Paco jet which is usually used for mixing ice cream. I use Paco jet for making purée smooth on this video.

So.. if you're about to get the compose onto the Paco Jet .. why are you blend ? ? Are you being paid by the hour ? Cook is lazy ! What that means 6% on this context?
