Recipe
600-650g Purple Sweet Potato
220g Organic Cane Sugar
250g Tapioca Starch
500g Coconut Milk
1 tsp Salt
Grated White Coconut from 1 coconut
1) Cook sweet potato and sugar 20mins Varoma Speed 1
2) Add Tapioca Starch, Coconut Milk and Salt and blend 30 secs Speed 6
3) Pour into a baking pan (I'm using 8inch x 14inch) lined with baking paper and steam for 30mins.
4) Using your TM, steam the grated coconuts mixed with a pinch of salt for 10mins Varoma Speed 1
5) Cut sweet potato cake with a plastic scrapper or a plastic knife so it doesn't stick and coat sweet potato with the steamed grated coconut.
6) Serve and Enjoy !
