Thanks. This reminds me of a recipe of Madhur Jaffrey’s where I cook the red wax potato, and refrigerate it overnight. Next day fry with salt and lots of freshly ground pepper. Tastes awesome. Everyone I have served it to has praised it. Unique dish, simple and so tasty.

These are yams my dear friend not sweet potatoes. Sweet poratoes are different. Sweet in taste and has rich orange-colored flesh that's less srarchy than regular potatoes. Yams on the other hand are just like potatoes despite the dark, hard and more like a tree trunk skin.

Actually it’s the other way round. The orange fleshed one is the yam (although labeled sweet potato in the US) and this is the sweet potato.
