Oh we grow rhubarb..we love it…Rhubarb Crumble…is a favourite…(cook in orange juice is nice too add ginger if you like it.)

YUM to the Rhubarb! Never too tart! As kids we would pull a stalk and eat it like celery 🥰 My Mother would make the custard Rhubarb pies... hers were incredible! Miss my Mom! Childhood memories are right! And I also agree with that “New England custom of PIE FOR BREAKFAST! “.... Of course! Fresh hot coffee and pie! Be still y heart! Lovely video! 💕

Rubarb custard pie is a family favorite , l try to bake one or two-year each spring, yours looked delicious 😋 Our pups are l think very similar our boy Finn is an six year old Aussie Doddle, he's our love ♥️

I made this yesterday and baked it 55 minutes, I let it cool, then into refrigerator. Pie tasted good, did not set up, very, very runny. I suspect that it may not have baked long enough. The rhubarb was fresh. A bit chewy. I’m going to try again soon. Blind baked shell was getting dark. Any suggestions? Thanks

Hi! At this time, the only suggestion I can make, since you mentioned you blind baked your shell, is to not blind bake the crust for this one. Putting the mixed ingredients on the fresh pie crust helps soak up some of the juices, and the crust partly becomes one with mixture, making somewhat of a custard. Please let me know if this made a difference if you try it again. The rhubarb should be very soft. If your oven is calibrated for the temp, maybe add a little extra time.

You can, but the strawberries will certainly create more syrup from the sugar so the wet ingredients would need to be modified. I'm planning on figuring that out hopefully soon.
