Ingredients:
800g pork short ribs
3 slices of ginger
A bunch of spring onion
25 - 30g yellow rock sugar
1/3 cup Chinese cooking wine
1/4 cup apple cider vinegar
1 1/2 tablespoon dark soy sauce
1 1/2 tablespoon light soy sauce
1/2 cup of Chinese vinegar
2 cups of water
THE ABOVE ARE YOUR BASE INGREDIENTS, FEEL FREE TO ADD ANY OTHER MARINATE YOU PREFER.
Step by Step Procedure:
Prep time: 5 minutes
Cooking time: 1 - 1.5 hours
Preparation:
1. Wash pork short ribs
2. Finley chop spring onion
3. Cut a few slices of ginger
Cooking:
1. Blanch the pork short ribs with cold water, Chinese cooking wine, ginger and shallot. Blanch for about 10 minutes and remove all the impurities.
2. Cut short ribs into smaller pieces and pat dry with paper towel.
3. Pour in oil and caramelise the sugar
4. Stir fry short ribs for 5 minutes or until you get a nice brown colour
5. Pour in Apple cider vinegar and stir for 1 minute (OPTIONAL)
6. Add dark soy sauce, light soy sauce, Chinese vinegar stir well.
7. Pour hot water, enough to almost submerge the short ribs.
8. Put lid on and cook for 40min - 1 hour in a medium heat
9. Turn heat to high reduce the remaining sauce to a sticky consistency, it will take about 10 minutes.
10. Just before the sauce drys up, pour in remaining Chinese vinegar.
11. Add white sesame and finely chopped spring onion for garnish
