Sweet Southern Style Cornbread
2 Tablespoons Olive Oil
2 cups Yellow Cornmeal
1 cup All Purpose Flour
1 Tablespoon Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/4 Teaspoon Cayenne Pepper
(1) Preheat oven to 400 degrees F. Pour oil in skillet and place in the oven.
(2) Combine Cornmeal, flour, sugar, baking powder, baking soda, salt and pepper in a large mixing bowl. Whisk.
1-1/2 cups Buttermilk
3/4 cup Mayonnaise (I used Blueplate since it was their recipe)
1 large Egg
2 Tablespoons Cane Syrup
(3) In a separate bowl whisk Buttermilk, mayo, egg and syrup.
(4) Pour wet ingredients into dry and mix well.
(5) Pour batter into hot skillet and bake 35 minutes or until done in the center.
4 Tablespoons Butter
4 Tablespoons Honey
1 to 2 sprigs Thyme
(6) Cook and stir butter, honey and Thyme until melted. Put lid on pan and let sit until cornbread is done to let the Thyme infuse the butter.
(7) Pour over cornbread as soon as it comes out of the oven. Let stand 5 minutes before serving to let the butter mixture absorb.
