Hi! Wow that looks really good! Can you substitute the maple syrup with the Lakanto keto syrup? Thanks!

Hi! I've never used it or tried baking with some. The thing is, with pure maple syrup, you boil it to help thicken it, which ends up replacing traditional refined corn syrup. With the Lakanto, there's no sugar to boil and thicken. I'm not sure how that would work, but there could be a way to thicken it with minute tapioca, tapioca pearls, psyllium husk, rice or other. If you were to experiment, consider making half the recipe, as Lakanto is even more expensive than maple syrup. @@FreshisReal wow, thank you so much for taking the time to answer in such a thorough way! I'm one of those pain in the butt gluten-free, lectin-free, semi keto folk! Yes regarding the thickeners. A bit of xanthan gum may help as well! I'm excited to try it and will make a small batch and let you know how it turns out!

@@capecyn Perfect time to use some! Do you have something a little more natural than xanthan gum to thicken the filling mixture? Are you going to add coconut cream? Even more flaxseed meal could help. And you can probably skip the boiling part as you won't be using maple syrup. Simply create a mixture with your syrup, coconut cream, and the mix-ins you want, then bake overtop of the pre-baked base crust. I don't see why it wouldn't work.
