I live in a country where ants are so friggin' common. Everyone has had at least a visit at some point. I gather that you insert ingredients and WAIT. Any chance they can get inside the machine? Also, is it possible to get the dough container in a not-a-nonstick version?

Hi! Do you have the option to set the temperature? Lucky you! The baking temperature of most bread machines is around 350°F. This is why, on average, a smaller gluten-free loaf needs a minimum of 1hr10mins to bake. Longer is excellent, too, when possible. Larger gluten-free loaves might require longer baking times. Ideally, the internal temperature of the baked loaf should be 210°F once fully baked. In my bread machine cookbook, I developed GF bread recipes to be smaller than regular wheat-based loaves of bread. In the book, I suggest the settings to consider for each type of bread recipe (quick breads, yeasted, sourdough, etc.). What temperature should the bread machine be when making this loaf? I programmed it for 1H 10m and for a 350* temperature. Is that okay? Thanks!

That should work. Check the internal temperature at the 1 hr and 10-minute mark; if it has reached 210°F, it's ready. Add 10 more minutes of baking if it's not. Some machines can't bake for longer than 70 minutes.

Hi! If you want to replace the starch, try using more oat flour. So, instead of 90g of oat flour with 60g of tapioca starch, try 150g of oat flour with the other ingredients listed in the recipe. Oat flour is starchy and sticky, so it should be a good alternative. Please let me know if you try it.

Hi, thank you for the wonderful recipe so clearly explained. The place where I live, I don’t get most of the flour so easily. I’d be grateful if you can share a recipe with whole wheat flour. The whole wheat we get here has lesser gluten content. I’m ok with psyllium husk, rice flour, corn flour. I’m also ok with dairy milk and yeast. What I m looking for is a whole wheat eggless bread. I have tried a couple of times, the whole wheat bread machine bread that made was tasty but the texture was not great. If you can give me a recipe for a 199% whole wheat eggless bread recipe, that’d be amazing. Eagerly awaiting your help in this. Thank you. Wish you and your family a very happy new year.

I made this as a boule; baked in a springfirm pan for 45 minutes in total with it covered with aluminium foil for the last 15 minutes. It turned out great.

Very nice! I tried it too just the other day in a bread pan with lid and it worked beautifully. I baked it for 1 hour at 400°F uncovered for the last 15 minutes.

Hi, it was a very well charted recipe. I have 2 questions please. 1. Can you share a video of the completely done by the bread machine version of your bread. 2. You use 6 varieties of flour in this recipe. Can you give a recipe which uses a fewer easily available flour. What I’m looking for is an eggless 100% whole wheat bread. I don’t mind rice flour or corn flour. Also at the place where I live, a lot of the flours you mentioned aren’t available easily.

;) I love to mill raw buckwheat groats and oats as it creates the freshest flour. I also grind seeds (flax, hemp, pumpkin, sunflower, etc.) into flour all the time.

I have read that you shouldnt ice the mixture and let it cool down in a cool Pot till it reaches 195 before going over ice since cooling it that fast makes the outside too cold to fast and it gets an uneven moutfeel in the end. But we are talking nuances at this point I guess

FYI the FDA’s requirements for “gluten-free” still have levels too high for many celiacs. Dextrose is a form of sugar, and the *second* ingredient. And they use an unspecified flavoring, which are often synthetic chemicals. That’s a no for me, dog.

It's not for everyone, that's for sure, but it's an option. However, many in the Celiac groups I belong to love and use this flour often. Again, this flour is not for people with a wheat allergy.

OK, this is Day 1. Using your measurements from the attached link: 6 Tablespoons brown rice flour(50 gr) and 1/4 cup water: this made a VERY thick paste, quite unlike the one we see here in the video. So after re-watching I have added extra water to give it the same consistency as yours. Are these quantities correct? Should it be 1/2 cup, perhaps? Appreciate your thoughts. Thanks.

Hi! Depending on the brand of GF flour you use, some might be way more absorbant due to how finely the grains were milled. So yes, adding more water to achieve the best mixable consistency is perfect.

Hi! Great question! I think I should create my next video on the difference between mixing by hand and using a quality stand mixer. Please note that if the mixer is not a heavy-duty brand, it could burn the engine if mixing for too long or if the mixture becomes too thick and difficult for the mixer to handle. Also, with a mixer, I feel that the recipe should be doubled to 4 cups of maple syrup, as with two, the mixing paddle might not reach the boiled maple syrup in the bottom of the mixing bowl.

The preheated Dutch oven does bake nice GF sourdough loaves of bread, but you can get equally great results from baking the dough in a bread pan.
