I will be subscribing as soon as I finish this comment. I am so very grateful to find this recipe!! I've done pretty well since becoming lactate intolerant - I use soy and nut milks as they seem appropriate and I've found recipes for most of them, I use Greek yogurt since that's well tolerated to replace many of the dairy products like sour cream, even whipping cream in baked goods, but I've been at a loss for a replacement for Sweetened Condensed Milk - no longer! I see a lot of great videos by you in the right column so I'm looking forward to watching!

I get a newsletter in danish from a vegan site. They made a version with plant milk. They took about 1½ cup plant milk and ½ cup sugar, added a pinch of salt and let it simmer for about 2 hours. 20-30 minutes before it's finished they add the seeds and pod of ½ vanilla bean. The finished result gives about a little more than ½ cup of vegan condensed milk. I am sooooo glad vegan versions exists 'cause I've wanted it for so long. NOTE: For some reason oat milk doesn't work. All other plant milks do work in the recipe.

Success! The pan size made the difference - I had used a 1-quart size before. This time I used a 2-quart size, and it thickened nicely!

I made mine using a full fat coconut milk can and 1 cup of granulated sugar and it did not take on any color. It was think and delicious but translucent like when you make candy. I wonder what went wrong. :/

Is that real coconut milk or store bought? Will the simmer time be different for real milk?

Wouldn't it work better to evaporate the water off BEFORE adding the sweetener? Then you'd reduce the chance of scorching. I don't have 1-2 hours to wait--fireballing it with constant stirring. Trying it right now!

I don't see why not. Just leave the lid off. Some of the liquid needs to evaporate.

I used the full fat canned coconut milk, brought it to a boil and added the honey, lowered to low simmer and stirred occasionally. After two hours it was still too liquid - I cooled some to check and then continued to simmer it another 2-1/2 hours. The honey darkened and congealed at the bottom of the pan, and the top was just liquid coconut oil. I'll try again, but would appreciate your thoughts!

I did have to let mine cool for a full day in the fridge for it to set. Two hours wouldn't be long enough. It sounds like it may have cooked for too long when you put it back on the stove the second time.

How what do I replace honey with? Can I use sugar and can I do it WITHOUT a stove?

You can use sugar if you want but no you can't do this without a stove. Not that I'm aware of anyway.

Use a thermochef-machine if you do not have a stove and if you want that golden color just use raw sugar and if you want a thicker consistency add tsp of cornstarch

No, that won't work. Only coconut milk that only has coconut milk as the ingredient will work. A can of coconut milk with a bunch of binders and thickeners won't work either.
