Because it takes a LOT of time and effort from design teams and toy engineers to make something that looks amazing in both modes. Effort and money they have a ton of, but it's time that they lack.

I love how the G1 Optimus Prime toy is so iconic, even the transformation pattern hasn't changed all that much. Arms lock into the sides of the torso, head flips inside, legs bend back. The basics are still the same after all these years.

That is an amazing looking figure, no doubt. It's the most unique transformation for Prime I've ever seen, especially the head. It seems every other Prime has the head fold out from the top or back of the cab, this one goes into his belly. I'm concerned, however, that with so many flaps something is certainly going to break.
