HarmonyOS NEXT is still beta so unless you participate in a beta program like in the video it'll remain HarmonyOS 4.3

Harmony OS is partly based on EMUI EMUI is getting newer features based on Harmony OS. They're linked and feel similar overall. Harmony OS gets features first though

Settings > developer options > there a line to downgrade, i have tried and success on the matepad pro 2024. The apps data will be lost but other data(images, docs, download files,..) can be restored.
