Naaah. If you've watched many of Guga's videos, you'll know that Guga is very honest when he doesn't like the results of his experiment. He'll say it straight away if what he ate isn't good.

Second steak was No Salt, using MSG instead.. they didn't like it.. but they both preferred the MSG coated steak, and went in for more. Guga would say if an experiment was bad, they said it improved the steak but it needed a little salt.

Re: robots in restaurnts, I'll shout out my favorite Chinese place of all time in North Austin, Asia Cafe, you go to the counter and order, and they call out your number with each dish and they start coming out in about 5 minutes, there's no wait staff, and one busser. That's why they're still in business. I've been there dozens of times now. No robots can cook that food. They specialize in Siichuan cuisine mostly, but have other authentic regional offerings and a huge menu. They're just smart about how they run the business.

I don't remember off the top of my head but I believe the first is s non-dry aged steak, the second is a dry aged steak, and the third is the MSG steak. But the second could be seasoned with only MSG instead of salt.

Pat was a sub of FPS Russia??? And I don't know if FPS Russia exists anymore, they tried getting him on federal crimes and stuff. and FPS Russia was around since like 08' on KZbin. I have my Grandpa's scimitar, slicing, and boning knife from when he was a butcher at the meat processing plant at the Fort Worth Stockyards in the 50s which it sadly no longer exists. Until about 10 years ago you could see the abandoned building from the Stockyards but I think they tore it down and built something else there. I've never once used his knives because they're more a keepsake that stay oiled in an oak chest.

If Guga doesnt like it he says so. Most times hes not a fan of the experiment steak and hes even had to spit it out. Butchers dont know taste. They simply know how to cut meat. They have no idea how to cook it or theyd be the chef not the butcher. 👍

Though maybe you were speaking wok specific talent, and maybe some of the chef's I've known were just unlucky, but there certainly isn't a lack of talent. A lot of younger ones I've know leave because of a lot of corporate BS...either finding work where they can't rise, or leave altogether...

sigh... another person who only knows their own stuff and guesses at the science. this isnt really dry aging, this is like corned beef. m.s.g. isnt a "super salt" its a type of sodium. it acts like salt in a lot of ways though, including being absorbed through osmosis. so he basically made corned beef, with the flavor profile of seaweed. try it yourself, use 2 pieces of beef, put one in a bucket of table salt, one in a bucket of msg at walk in cooler temp. they will come out looking the same, but with the different flavor profiles. and just as safe as each other, food safety wise.

Next time you have Pat LaFrieda over, can you ask him for the difference between european and american steaks? I live in europe and believe that the beef cuts sold here are waaaay lower quality. Guga made a video where he tried steaks in italy, and they appeared lower quality as well. Would love to know if the grading system, and the way cows are fed are different in the us.

There are extremely high quality steaks in Europe. You just won't get them at the discounter. Grass fed free range Irish Black Angus for example is amazing.

I have also tried a wide variety of prices, like steaks that cost 17€ per kg, all the way up to 60€ per kg. And it's barely better or the same. When I buy steaks here, they are almost never well marbled.
