We've been using this fryer for about a year and really like it. Really good tip here to put the fryer on a sheet pan and then on your stove under the exhaust fan. One other thing that might save you some clean up is that when you want to move the fryer, if you've already drained the oil, remove the oil container from the machine and move it separately. If you leave it in the fryer and don't keep the whole thing completely level, oil will leak from the oil container and you might end up with a series of oil drips across your floor. Don't ask me how I know.
@stevebracken30823 жыл бұрын
In the UK, the Fish and Chip shops pretty much all do the two-stage frying method. They simply have two commercial deep-fryers setup at different temps and move the basket straight from one to the other. However, there is a serious issue with this procedure. Tests have shown that the chip absorb about 30% of their own weight in oil during the lower-temp fry, and if only fried at the higher temp the absorption is only around 10%. So many restaurants and institutions now use a different method. They either part-boil the chips, or they steam them for 10 minutes, then do the high-temp fry. The result is just as good, and a great deal healthier.

I like that I can "fry" something on a whim! An oil fryer takes so much more time to clean and prepare kzbin.infoUgkxD4Qeo-HRLxMfom_PDinM_SBfes00qJsB a chore which usually kept me from frying all together. Also, the lack of needing oil to fry means that my family and I are eating healthier... while still enjoying the crispiness of fried foods.

I have almost the exact same unit, but co-branded with Emeril, and mine has digital temp control instead of a knob (but still only goes up to 374f). I just wanted to point out that a neat feature of the automatical filtration is you don't have to wait for it to cool down. There's a temperature controlled mechanism that prevents the oil from draining until it cools enough. So you can just fry, turn it off, flip the switch to FILTER, and clean the machine in the morning.

We just bought one of these about a month ago and have used it three times so far. We found that, after cooking, you can immediately put it on the drain setting, and the oil will not drain until the oil cools down - usually 1-2 hours after cooking. The unit can be unplugged during the cooling process. We reused the oil three times before discarding it.

In the UK where we call fries chips and most people here aim for chips like you might find in our 'fish and chip shops', I use a slightly different approach to emulate the British chip shop chip. I call it the 15/15/15/15 or 1 hour method. So the first 15 minutes I cut and peel the potatoes into chips between 1.3-1.5cm thick or there abouts. Ok so this step might not take you 15 minutes or may take you 30 but hey, it helps me remember the process. I start the cooking process by steaming the fries for 15 minutes. Most of the external starch drips away in the process. If you don't have a steamer, boiling them is an option but you might need to do them for a few minutes longer and you may lose more potato flavour than if had steamed them, this is certainly the case with other boiled rather than steamed veg. Then I lay them out to dry for 15 minutes. Because they are already so hot internally, they dry pretty fast. No need to go over them with paper etc but do lay them out or ensure the moisture can evaporate away easily. Finally I fry them in oil, preheated 180c for 15 minutes. Note I don't use corn starch but maybe that would be worth a shot before frying. The pros of my method are not needing to soak them at all and not needing to use up a load of kitchen towel or handling time to dry them. The cons I guess are needing a steamer of some kind and also you need to be careful not to be rough with the fries after steaming them as they are quite fragile. Uncle Scott's method avoids handling them when they are fragile as he fries the chips from raw slowly, leaving them in the basket before going up in heat.

Par-boil them after you have washed them to remove the starch (then they don't stick) leave to cool or put them into a slightly warm oven to dry then fry them. You could cook them three times, that is par-boil, 1st fry for a few minutes, leave to drain, then the final frying.
@anthonyrosa50064 жыл бұрын
I had the previous version of this frier lacking the oil filter and storage. This is a big improvement as draining and cleaning the oil was a pain. My other point was that it felt like it lacked capacity. I ended up chucking it for frying in the dutch oven since it felt like it could only cook fries for one and even less fried chicken. Fried chicken batter would foul up the oil with batter bits and coat the basket. For me it was easier to make Korean Fried Chicken(yum!) in a dutch oven on an electric stove since they use a thermostat and seem to maintain oil temps better (than gas, one of the few positives of electric stoves) by having a vessel that retains heat energy and a larger capacity of oil so the oil temps dont drop as badly when food in put in. Regardless I like your show. Another guy who loves food and cooking, my kind of guy.
@UncleScottsKitchen4 жыл бұрын
All good comments. I think on gas, the temp just keeps going up and up so you have to keep an eye on it and adjust. I used to cook fries in my dutch oven on gas, but I had some trouble with the oil overflowing once the fries got in it, so the dedicated fryer kind of keeps me out of trouble. Thanks for watching the show!

Thanks for confirming what I thought, that those built in metal filters on deep fat fryers don't work! The ones with the charcoal and cotton like filters are better, in that they prevent the oil filled moisture from marking your ceilings, walls etc. Their aren't many good fryers, with removable easy to clean filters around - but their should be, as it's an easy design to add. I also didn't like the lack of a hook on the basket on this model, where you can hook the basket and let it drip the oil for a while, which is more efficient that just shaking the basket.
@UncleScottsKitchen5 жыл бұрын
I think there is actually a little hook/lip thing to hang the basket on, at least on the one I have. For some reason I always forget about it and just shake. Nice comments on the filters!

Should you take the storage container out and store it in the refrigerator, or is it okay to leave it in the unit and store in the pantry? Also, how many uses do you get out of your oil before you change it out. One last thing, are the temps true?
@UncleScottsKitchen5 жыл бұрын
I just leave my oil storage container in the unit. I don't put it in the fridge. I guess you could but most people probably don't store other oil in the fridge, so not sure that it would help the frying oil all that much. I have not had any trouble storing it in the unit. I think storing it in the pantry is fine. T-Fal says change the oil at minimum after every 10 uses. If all you do is fries or tots, that should be fine, but if you mix foods (like chicken, fish, onion rings, etc.), that is going to impart flavors to the oil and you should change more often. I wouldn't cook onion rings and then use the same oil for donuts! I have found that each time I fry, a little oil goes away with the food, so I end up topping up the oil pretty regularly as well. As far as temps, I didn't independently check them, but I have not had any trouble cooking, so I guess they are fine. Thanks for the comments!

I could have sworn I subscribed to your channel years ago when I was starting out with carbon steel skillets. Apparently I did not but I have rectified the situation. I've been on the fence as to whether to buy a deep fryer or not and if yes which one? At first I was concerned by some of the one star reviews I saw on Amazon for this unit, but the more models and brands I looked at they all had the same complaints, and a lot of them seem to stem from people expecting restaurant level capacity and performance. And there were the occasional customer who received a lemon. It came down to the T-Fal, the Cuisinart, and the Chefman. I think I'll probably go with the T-Fal. The people who bought the Chefman seemed happy with them after they got one that worked, seems to be a lot of lemons leaving their factory, I believe you had one also. That just left the Cuisinart and the T-Fal, the Cuisinart is a slightly larger capacity, 1800w vs 1700w, love my Cuisinart food processor, and it's about $20 cheaper. In the end the oil filtration system was the clincher, that and the T-Fal had a slightly higher rating with almost 10x the number of reviews as the Cuisinart.

I think you made a great choice... my T-Fal is still going strong and works great.

If you can always deepfry outside. I put mine on a sturdy table next to my outside outlet. Not only will it save your house from smelling terrible for days it's safer.

The best white potatoes for chips (french fries to you colonials) are Maris Piper - I use reds though and Desiree ....

Is there a way to clean the oil storage container?
@2Bullies10 ай бұрын
Yes, the whole top side of the oil container is a removable plastic lid. It's not very secure though and can leak if not sealed properly

Hi Scott!! I want to know, what also do you cook in you t-fal deep fried ? Thanks you and your video is awesome and well explained
@UncleScottsKitchen5 жыл бұрын
I use mine primarily for fries to go along with steaks and burgers. You can cook chicken, doughnuts, fish...lots of stuff. If you cook onion rings or fish, you should keep that oil separate, else everything else you cook could have an off-flavor. Unless you like fishy doughnuts! I will put other foods on the proverbial UPCOMING VIDEO LIST. :)

Great video...thank you! I understand that the oil can be used up to ten times, but is there a “shelf life” for the oil if you only use the fryer once a month?
@UncleScottsKitchen4 жыл бұрын
There is definitely a shelf life and it will vary. Once oil has been used, I don't know exactly, but maybe 6 weeks? Two months? Depends on what you've cooked in it, store in the fridge or not, etc.
@Bigheadedwon4 жыл бұрын
depends on what you fry and how you store the oil. A cool dark place helps, it also depends on how sensitive your taste buds are. Clean and reuse the oil until whatever you make tastes funny. If you fry a lot of breaded and battered things it'll go bad quicker. The type of oil you use will make a difference, I typically buy Peanut and it seems to last longer before things start to taste rancid. A few years ago I fried about every 4 months and the oil was still good to use at the end of the year. I stored it in a dark cupboard. But as I said YMMV depending on how well your taste buds work. If you're mostly frying chicken you won't get 10 uses out of the oil.

what size cookie sheet fits under it?

Excellent vid! But dang just like all the Dutch Oven deep frying I've done I'd still be inclined to use the thing outside. That oil/(and dust) will collect in your vents before escaping through the roof. Fried foods are the bomb but what a fire hazard you have to constantly be aware of!

Background music is far too loud. Maybe cutting it by 50 or 75% would work, but I don't need a symphony when I want to watch a fryer video.

Thanks for the video, was perfect. What size fryer are you using? I just purchased the and in the video yours does not look very large. Just curious. Thanks for your reply.

Thanks for making this video. How is your longterm opinion about this fryer. It seems to get bad and good reviews

How do you discard old oil once it’s time is up?
@UncleScottsKitchen5 жыл бұрын
Depends on what kind it is. My wife pours hot bacon grease through a strainer and keep it in a special container after it hardens back up. If it's oil that is liquid at room temperature (like canola), I usually pour the excess in the garbage and wash the rest down the sink with dish soap. I try to take care not to put any oil that hardens up down the drain, as I don't want any plumbing problems.If I am cleaning anything with oil, I usually have hot water going and use Dawn dish soap to keep it dispersed. If there is a bunch of oil (like changing it out in the fryer), I pour it in an old milk jug and put it in the trash.
