I'm not sure which one you mean. When 1:30 he add Coffee Powder into the spoon. It is not a essential ingredient but just a seasoning. Subsequently(1:32), he add a little Baking Soda. It is for making the sugar puff up. The essential ingredients of Honeycomb Toffee are Brown Sugar, Water and Baking Soda.😊
