A chimta or pair of tongs along with the large perforated scoop that you are using would possibly make it easier to lift the string of jilebis out of the oil, or the syrup. It's interesting that you use maida as well as ground urad dal for the batter. Jangiri here in Bangalore, as well as imarti in our northern states use only urad dal, while jalebis seem to be made with maida.
