I'm English and have visited Covilhã a few times (actually based in Boidobra a parish just outside the city proper) Covilhã is a wonderful place where I felt completely at ease and I loved the mix of modern and old architecture which blends together really well. The mountains provide an impressive backdrop and People were very welcoming and laid back. Food was fantastic. The culture enticing and the history intriguing. For any estrangeiros (foreigners) who are thinking of visiting Portugal, just go. You will not regret it. The country has an ambience that you will love. Once you've been once you will return.

Congratulations on your channel and the quality of your videos. It´s amazing to see how Covilhã has changed (you chose the most difficult city name in Portugal for an English speaker with the "lh" and "ã" in the same word ,,,LOL). I used to spend some time there 4 decades ago because my father´s family is from a nearby village. Coviilhã is an interesting choice. Small city but with a lot to offer. A bit like Portugal. Keep enjoying your journey and before the Summer( and the hot) starts take a trip to Alentejo. Completely different but if you like open spaces, good food and wine... it´s a must see.
