Quick tip- don't reduce food in just 1 pot when doing bulk canning. It is worth the extra dishes to divide up the sauce into multiple pots and cook. It greatly reduces time needed to thicken sauce because the the heat distribution works better in small batches.

You have enough energy for 10 people! I love being in the kitchen but at 77 I’m finding it harder and harder. I’m grateful for the no knead bread recipe you posted the other day, I’ve made it twice already. It’s the easiest bread I’ve ever made! Just one little hint for you.. as you cook down tomato sauce or the ketchup for example, you should continually scrape the inner sides of the pot because the tomato concentrates there and adds a great deal of flavor to your product.

Becky, i think using the food mill is the reason the ketchup is so thin. It not only removes the seeds and peels but also removes the pulp so you were left with basically tomato juice. I just blanch and peel and core my tomatoes and cook them in the roaster for nice thick ketchup.

YESSSS, I love when you put in little timeskips to the future. It always gets me when someone mentions something to be done later and then forgets to put footage from the process and only shows the final products. I ALWAYS want to see the freeze-dried stuff turn to powder, it makes my brain happy. I think your channel is the only channel where I will sit and watch the entire time, no matter what my schedule looks like. It's my favorite show, better than watching the food network on tv.

I simmered my ketchup this year for a full 24 hours to thicken! It is so beautifully rich and thick and I honestly loved spreading the work over two days. My house smelled amazing.

I simmered my ketchup for 24 hours as well. Made it for the first time and had to let it simmer over a day. I leave it on low overnight and it worked just fine.

Butternut squash was one of my baby's first foods that he absolutely loved. One tip for when you can pumpkin or squash, after you have cubed it, blanch it in boiling water for 2 mins. This removes air from the veg, and allows more squash per jar, plus you dont get that thing where the veg all float to the top and liquid sits at the bottom. You can use the blanching liquid to fill your jars.

Wow Becky, you do it all! I was thinking about the reduction problem you were having with your ketchup. Perhaps if you reduce the amount you are trying the process ( you tripled the recipe and used a single pot) so a tripled batch use 3 different pots and you could increase the surface area for evaporation (reduction.) Just a thought. ☺️ So excited to see what other things you have in store for us!

Becky, you can put your tomatoe juice mill at your kitchen sink. Put your pan in the sink to catch your juice. Another bowl in the sink to catch your pulp. Just set your juicer at an angle.

This was a GAME CHANGER for my ketchup this year. I first cooked (until soft) the tomatoes, ran them through the tomato press and then through a fine mesh strainer. It was so thick I had to add a bit of liquid back! Took me a few years but I finally made the best ketchup ever 😊

I use an electric roaster to reduce my large tomato projects and let it simmer all night on low being careful that it doesn't burn. Also, I made a delicious butternut "pumpkin" pie from my canned squash, but you have to let it drain in a colander over a bowl to remove a lot of the liquid. You should probably do that for any dish you make with your canned squash.

Becky!!! I'M SO EXCITED to share this with you, but freeze dried tomatoes are AMAZE-BALLS in Tomato pie! I had trouble with too much moisture in my tomato pie. It always tasted awesome but was somewhat watery with fresh garden tomatoes. Half and half fresh tomatoes and freeze dried tomatoes is perfect. Or go really light on the rehydration and use all freeze dried tomatoes. You will be able to eat Garden Fresh tasting tomato pie all winter long. #LifeChanging Enjoy!!

I’ve had some gardening successes and some gardening fails and even a groundhog situation to figure out, but the lesson learned in all your videos is to just go for it so I do!

Fy Nyth - a tiny house channel where she & husband have moved to new bare land. She had a problem with a ground burrowing pest in her old garden and did the same in her new in case they were also there. She put a mesh wire hardware cloth down beneath the raised bed. The plant roots could go thru, but it was fine enough that the animal couldn't get up beyond it to the actual carrots and other plant parts. It was easy to see how it worked in the videos where she tore up the old garden and moved the mesh and cement blocks to the new location and set up again there. For this, you do have to use some sort of raised bed above the mesh and surrounded by something the animal can't burrow through. She used cement blocks around the bed area and it was deep enough for carrots and other things. Good luck!

I have a few tricks to getting Ketchup thicker. I also thought that reducing it was a waste. But I love thick ketchup. I freeze my tomatoes for ketchup, because when they thaw a lot of the juice separates from them. And I run them through the food mill before cooking. And I did add tomato paste to mine too! When my wooden spoon stands up alone in my ketchup it is ready for canning!

Hey Becky! Try opening both ends of the tomato paste cans. Then you can push everything out one end with a spoon (or just shake the can till the paste falls out!) Every last bit of tomato paste comes out and no need to scrape! 😁

A nice trick for getting out ALL the tomato paste is open the top of the can, flip it over, open the bottom of the can, take the top lid off and push the bottom lid through! You'll get all the paste without scraping with a knife 🙂

Hi Becky, I’m a neighbor to the south (Eugene area). With paste tomatoes you are supposed to use the pulp because it doesn’t have many seeds. I would second the recommendation of freezing and partially thawing. I use a turkey baster to pull off the extra water and the skins slide off easily. A blender will take care of any seeds you have left.

You can use dried tomato powder (skins) to make paste - just add water to powder to get consistence knowing the powder may take a bit to rehydrate well. It works really well!

Hi Becky. Have you considered purchasing a large commercial stainless steel kitchen trolley for moving and/or using your heavy or bulky things? Putting a large bucket on it for running the food mill into for example, and shifting large pots of boiling stuff. Or taking into pantry and loading up with all the items/ingredients at once. Bonus use.. after baby is born allows you to stop what you're doing quickly to attend to them. I also use it for moving things in from car/garage, take it from room to room when house cleaning with assortment of baskets or containers of cleaning items and room to remove dirty or misplaced items. Bonus bonus use.. your child can sit on the bottom "shelf" while you are drifting around the house too 😃 Easy to wipe down and roll away for storing somewhere out of the way

Becky, I think the problem with the ketchup reducing was because you doubled the recipe. When you boil any liquid the reduction comes from the surface of the kettle where the steam bubbles form. In order to reduce by half in 45 minutes, you needed to use 2 large pots. By adding paste you actually were changing ratio of liquid to acid and adding cost to the ketchup. It might’ve thickened faster by adding more sugar.

Fantastic job! I’ve been there before… Where you are with the liquidy tomato base for the ketchup. What I’ve learned is that if I plan to use the food mill rather than removing the skins ahead of time, I really cannot cook the tomatoes down too much at all or what ends up happening is when it goes through the food mill, the tomato meat is too soft, and the food mill works more like a juicer than something that leaves you with a thicker tomato product.

You can freeze tomatoes for use in recipes like ketchup. Then you drain off the liquid and make a huge shortcut to simmering down the pulp. Also, I re-watched the video, and I think that you may have added 2 extra cups of the vinegar. (?) Also, you could probably have boiled a smaller amount of the ketchup base at a time, which would have made the process of reduction perhaps go a bit more quickly. Everything looks delish. And that Sloppy Joe mixture is the bomb!

Hi Becky! Regarding the electric tomato press you were talking about, you should look up the Kitchenaid strainer accessory. I used to use a manual tomato press, until I realized I had bought that attachment as part of a three attachments set. It works like a charm!

I never wanted an electric pressure canner until I started watching your videos. I've always been an old-school stove top pressure canner. Now, I am definitely going to get one. ASAP!

Hi Becky! I made ketchup this year too! My recipe used thermflo. It is a canning thickener, you can also use clear gel. They are the only canning safe thickeners (except tomato paste of course). My ketchup came came out so great😊 and you don’t have to boil it down as much. I only cooked mine down for an hour.

I love your channel. You have such energy. I wish I had learned all of this when I was younger. I started in my 50' now in my 60's. After working hard preserving to rid my food of chemicals, l love finally relaxing with a cup of coffee and your videos. Always full of great ideas. Ditto. Now I have a craving. I actually looked at my veg and pantry and have the makings for homemade Sloppy Joe's so that is what I am going to make tomorrow. I already made pasta tonight, otherwise, I may have pivoted. Her Sloppy Joe's sauce looked so good it made me want a scratch and sniff laptop. Haha.

It is ground burger with sauce eaten on a bun. Becky if you have precooked frozen or canned burger you have a meal in less then 30 minutes ☺️

@@paigedevine5586 it is everything Becky made but then you add ground beef to it and serve it on a bun. There is a brand called Manwitch that is Sloppy Joe’s in a can that you add cooked ground beef to. It’s pretty good but I’m sure it doesn’t come close to as good as homemade, especially the way Becky made it!

@@paigedevine5586 It's an American "ragu" that, instead of being added to pasta or rice or potatoes, is cooked until thickened and served over a hearty bun as a very messy sandwich. Like many sauces--you can buy it canned or jarred and have a m'eh experience--or you can make it from scratch for a really wonderful meal. I personally like to make it from scratch, load it up with fresh veg like Becky, and cook it for hours just like I do my Bolognese...just very different flavor profile. :) And it freezes just great.

I’m a recent subscriber and I’m enjoying your channel a lot. I do not grow fresh veggies, since I’m retired and moved into 8th floor condo, but I do have a small hack that might be useful to you. To peel a whole garlic bulb quickly, cut whole bulb in half crosswise, so each clove gets cut at same time. Flip both halves over on board, cut side down, lay blade of chef knife flat on bulb half and give it a whack with your palm. Pick up bulb half and clove halves should fall right out. If that don’t work for you-you are holding your head in wrong position. 😂.

I made beautiful ketchup this year! Cheater tip: When the tomatoes are stewing down push a sieve down into the tomatoes and use a ladel to remove the juice that comes up, save that juice to drink, it's awesome! Then when it's all cooked and ready to can I used my emersion blender to whip it smooth. It turned out EXACTLY the consistency of hienz. PS, don't omit the cloves and I added a couple tablespoons of fish sauce to increase the umami!

I don't know if anybody has commented about this, but you can get an attachment for your kitchen aid to strain your tomatoes. The same attachment can be used to grind meat with a few alterations. I use it to make sandwich spread.

Hi Becky, minor tip for you, if you put your lid on your pot with it partially vented/open, it will help with bubbling splash. It will also help things come to a boil faster. If you do it that way, you will have to adjust your heat, because it will cook hotter. All that open bubbling tomato sauce has me cringing, hot tomatoes splash will scald you.

Pro-tip. You can do a quick vegetarian sloppy Joe by just opening a can or two of lentils and mixing with the sauce, heat it up and you’re done. :)

The PUR jars are great. I have bought a lot of them, no problems with them. I am going to try to make ketchup too. Looks so yummy. The sloppy joe base sounds yummy too. I have another recipe for that, so maybe i will try to can some.

Just a thought; when I do my Roma tomatoes, I cook mine overnight in my 18 qt roaster oven. It adds flavor and thickens the sauce. I enjoy your channel.

I use my roaster pan anytime I want to thicken sauces also. I put mine on 250 degrees and let it go. I haven’t had any problem with burning and it requires minimal interaction.

I don't know if you will actually read this, Becky, but those Pur jars are honestly terrible and have a high fail rate. I am in a couple of canning groups on Facebook and a lot of the people who have tried them said they were so disappointed that the lids failed by not sealing at all or losing their seal within a couple of weeks after canning. So be sure and check your jars periodically to make sure they are still sealed!

Love the videos. The reason you needed to add tomato paste to your ketchup, when you juiced your tomatoes you removed the pulp that would allow your sauce to thicken. I agree with a previous poster …cook the tomatoes and dip juice off. It will reduce cooking time and you can preserve the juice for drinking or soups. Also I get why the juicer…mainly to remove skin and seeds. You may just want to use the immersion blender or the one you used with the black pepper to smooth all that out.
