Their fresh daikon are so flawless and plump. The stuff I can get at the supermarket are already old and spotty. If I come across a good one, i'm going to tie it up and hang it for 2 weeks, then try making this. Wait--i don't know where to get that gardenia fruit or the rice bran. Just one would last us a year to eat.

+Yumi Han ニューヨークのど真ん中でたくあん作り!ちょっとした事件ですね(笑)ただ、大根は風通しの良いところで干さなければなりません。寒風にさらすことが大切です。あと、匂いがすごいですよ(笑)カビもきちゃうかも‥。残念ですが、お部屋の中はちょっと難しいです。ベランダか何かないですかね。ニューヨークのど真ん中のアパートのベランダに大根が干してあったらすごいだろうなぁ~(笑)

Unfortunately, we don't have other substitute for rice bran. It is absolutely necessary.
