First day in Oaxaca, Mexico means we are going to the origin. There's no better place in Mexico to get acquainted with local ingredients. That's why I'm here in the first place. Oaxaca has a beautiful mix of indigenous ingredients, served up through a uniquely Mexican lens. We will check out mole sauce, untempered chocolate, quesilla (Oaxacan cheese) and chapulines (fried grasshoppers).
