and its happening... im from Oaxaca and the downtown is full of commerces dedicated to foreigners and has become only enjoyable to wealthy people. Finally, Oaxaca does not belong to the Oaxacan people anymore.

mira, que chulada. we had an underground oven just like that one built in our backyard here in san diego a few years ago. so far, i've only used it for cochinita pibil. which has been absolutely amazing. i'm dying to make barbacoa, birria, & cabeza, i just have no idea where to find pencas de maguey. i can't bring them from TJ & they don't sell any in the mercados around here. don't want to hack up some random agave plant somewhere...

That pit is from a rich person. My grandparents oven didn’t have brick walls, and they didn’t used tubs. Nothing better than la barbacoa de Texcoco, it’s birth place, Texcoco The holy grail of La Barbacoa.

Depends who cooks it tbh. I’ve visited Oaxaca in 2014 and had this barbacoa dish. It was very delicious. I can still smell the aroma in the neighborhood when it was being cooked. 🔥

They serve it with some huge tortillas, I think they’re called tlayudas. It’s about 20” tortilla 😂 I visited there and had this same dish. Boy… I tell you, that man wasn’t over reacting how good that barbacoa is/was. It was very delicious. I visited 2014 and went back in 2017 for the food🔥

I thought they use copper instead of the galvanized metal? I know the thing they don’t like about copper is that when the heat fluctuates it’s harder to keep it steady. I’m thinking it’s safer?

Hey buddy you can go to visit Rancho Alfaro Oaxaca , there’s the Mezcal el viejo Manuelon they do barbacoa and then you can try el Mezcal. They speak English very well too to tell you the history of this town.
