Great attitude, guys - you seem to be enjoying the long rocky journey. Starting on your knees might indeed be best because falling in such a way as to get "impaled" isn't as likely. On the other hand I feel more in control when standing. Another tip to try is to gain a bit more speed without flying on the foil: keep weight on your front foot until past the minimum speed where the foil can lift you up and then start shifting your weight back for mini flights where you try to touch back down as soon as possible after getting airborne to remain in control. As a beginner the foil is difficult to control and more so at slow speeds - with a little bit more speed it becomes more stable and a bit less likely to swerve like in your first attempts. Something like 15 - 20 km/h should be plenty.
