Smoked Tri Tip Sandwich

This smoked tri tip sandwich was so tender and moist. The ciabatta roll with the chimichurri and the horseradish sauce is a perfect combination. It's so dang good ya'll.
1/2 cup chopped flat leaf parsley
1/4 cup cilantro
1 tablespoon oregano (fresh) or 1/4 teaspoon dried (optional)
1/4 cup red onion
1/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon salt
1/4 teaspoon pepper
Red pepper flake (optional)
4 garlic cloves
Pickled red onions
1 cup apple cider vinegar
1/2 cup water
1/2 cup sugar
1 tablespoon salt
1 tablespoon pickling spice (optional)
