I use a rice cooker for rice. Life changing! Tip - day old rice works great but if you don't have that and don't have 3 - 4 hours to chill in the fridge, cook rice, spread on a sheet pan sprayed with cooking spray and into the freezer for 30 mins. Works great! Costco sells thin sliced Rib-Eye - perfect for those cheese steak sandwiches. I'm with you on the mayonnaise, delicious!

Thanks to you and your videos, I bought a Blackstone a few years ago, and first cook was smashburgers, and I honestly can't recall the last time I made burgers that WEREN'T smashburgers!! I do 1/3lb patties and don't quite smash them as thin, maybe down to about 1/4" thick, but they come out quite wide and even hang off the bun a little, it's perfect! Hussey, Happy to see you back. You spoke about making memories with cooking, I do a crew breakfast for the trouble call crew that I am on for a local utility every Christmas. Full breakfast fare biscuits, gravy, bacon eggs sausage, hashbrowns, and goetta. And fresh fruit bowl. The crew thoroughly enjoys it and I love doing it. My mom always showed her appreciation by feeding folks good food. Love the blackstone and all that it is capable of cooking! Cooking is all about making it your own.

(var) smashburger - Try thinly slicing up some raw onions and add them to top of each burger before you smash them. Turn them over and they flavor the meat while they slow down the cook a bit. This is a great tasty way to add onions w/o the stack falling over when assembled. All these recipes are top notch. Gotta get my eyes on that griddle, though. She's a beauty.

I use to work at a smash burger joint. A few notes you do not need to hold it for 10 seconds just smashing it down will be good after the first 2 seconds you are just accelting the cook time. You don't need the parchment if you give your spatula/ grill press a tiny twist. Also it is highly recommend to season the patties after you flip them. All that escaping steam will take some of the seasoning away.

Do you wanna know a secret about the Rice? Put the Soy Sauce on the hot spot of the grill and not the rice. The rice absorbs the water and soaks it up making it a bit soggy. Let the Soy on the grill reduce a lot and stir it about. When its sticking to your spatula its time to drag the rice over it and toss the bottom to the top. I do that in my wok after trying this a few times I will never go back to putting it directly on the rice. Enjoy.

I'm a Griddle Pimp! LOL 🤣 The best way for fried rice is to use leftover rice that was cooked the day before and refrigerated. It makes it easier to cook and break apart from being clumpy.

I recommend trying some diced cucumber (scoop out the seeds) toward the end of fried rice. I had a lot of fried rice served to me in China like that and it was really great. Alternative crunch to bean sprouts.

Cheese steaks__ oil on the grill raw onions Chopped Steak on top of the onions salt the steak chop the steak into Smaller pieces spread the steak out to the width to the width of your spatula add the White American cheese on top of the steak fold the steak in half put the open roll in one hand then spatula in the other and place into the roll This keeps all the moisture in in the sandwich!!!!!

You can use cheeswiz too. I live in Philly. American cheese is the traditional. Next would be the wiz. Fried onions are amazing with the steak also. If you can find a long roll seeded, even better. Little ketchup and your good to go.

Prptip: Lightly press your ground beef into a 2/3-cup measuring cup to make a near-perfect 2" ball, or use a 1-cup measuring cup for a 2.5" ball. Don't pack the beef into the cup too hard, though as you don't want to compact the meat too much or your smash burger patties will overstick and come apart as they cook. Using a measuring cup will make surprisingly consistent patties every time.

Perfect rice every time. Preheat oven to 350. Bring water up to a boil. Add your washed rice to boiling water and kill the heat. Put lid on pot of rice and throw it in the oven for 30 mins. You will get perfectly cooked rice every time no matter what. At least I do lol. I might try fried rice on my griddle, but I’ve finally gotten a good wok game when it comes to fried rice. I much prefer the wok right now. Also, if you have leftover smoked or grilled meat, then chop it up and add that in. I added leftover smoked brisket and it gave my fried rice a smoky flavor that was incredible. Best fried rice I’ve ever had hands down.

Just subbed to your channel. So glad to see you use MSG in your recipe. Makes all the difference in the world. Very similar to the way I make fried rice on the flat top. Instead of onion I use shallot. I usually use serrano pepper instead of the bell pepper. I don't use bean sprouts in mine. I also use white pepper instead of black pepper. Nonetheless it's also very similar and so delicious. Good amount of soy is absolutely part of the game changer. Tonight I will be cooking chicken fried rice for dinner. A good fried rice is so satisfying. That totally freaked me out when I saw the dawn power wash. LOL LOL continuing to watch the video. Awesome stuff!

Their are so many local variations within a ten mile radius of south Philadelphia it's crazy. No matter what you use, as long as the roll is good and you're Intent is right, it can't be bad. I've been to Mr. Hero, Pennstation, and others none of the "Cheese Steak" sandwiches are really that good. Mr. Hero is okay so is Pennstation but Quizno's had the best Steak sandwich but it wasn't a cheese steak. If you can find there Angus sandwich recipes there were three the one was awesome it had a little bite to it but was bar none the best Beef sandwich I've ever had! Their Chicken wasn't bad either.

@@sterlling1It's too bad what happened with Quizno's. They had a problem in upper management that lead to store owner suing the franchise because they charged too much for the goods they had to buy,(from Quizno's) and couldn't make a profit. They were pretty great otherwise.

About 25 years ago, I lived in Hawaii. Oahu. There was a diner in Waipahu that served a fried rice omelette. It used 4 eggs for the shell, and about 1 pound of GOOD fried rice in it. Right now, I wish I was there. steve

Thanks so much for this video, Hussey! Looks like my mistake with smash burgers has been making the patties too big (about 4 oz) … I also can’t wait to try fried rice on the Blackstone - I would never have thought of that. Oh and what is Cheerwine?? I need to find me some here in New Jersey!

as someone who hails from the burbs or philly, this 'cheesesteak' looks fantastic. as a certified fat kid I can tell you, the key to a steak is not one thing. its the amalgamation of several elements, and most are personal. like chop of the steak, cheese choice, add ins, roll treatment, etc. you nailed the essence of it, which is make it how you like it. mine is : mayo on the roll, fried onions, mushrooms, with my favorite type of American cheese(cooper sharp). I also love a cheesesteak hoagie, which is just cold lettuce, onions and tomatoes(plus whatever else you like, i do banana peppers with no tomatoes) added to the top after you put the meat in the roll(dont forget the mayo) your other recipes also looked great and I can't wait to take my crack at them on my griddle! you made it look simple very simple and had good tips I wouldn't have thought of. you got my sub! thanks for the efforts!

For the burger patties, I like to mix the herbs and spices through the patty before cooking it. I feel it is just that little more wholesome on the flavor side. But great recipe this one. Great work. Kudos!

I use Brown Basmati rice. The ratio is 1:3, 1 cup of rice and 3 cups of water. Boil for 30 minutes, turn off the heat, leave the lid on, and let it sit for 30 minutes. Worth it!

I gotta tell you if you venture north of the Mason Dixon Line be prepared to eat yellow fried rice, nasty stuff. Since moving from MD north we lost our brown colored fried rice. Yours looks delicious. We might cut up some chicken and grill it on the Blackstone to add into that rice. I can not wait to try it. Made your Crack Slaw the other day it was delicious! Thanks for the recipe.

I’ve really been debating on buying a black stone for myself for Memorial Day and your videos helped me finalize my decision. When you picked up that Dawn dish soap my heart dropped but you redeemed yourself with the Dukes. Born and raised in Richmond, Va and I won’t use any other mayo! ❤

Looks great! I always add diced carrots & peas(plus, like you mentooned) some kind of cubed meat like ham) AND a couple of splashes of sesame seed oil. Mmmmm.
