This is my version of Tarte Tatin:
✨Hand laminated dough using croissant recipe from my website⬇️⬇️⬇️

✨Ribbon sliced apples using attachment for mixer
✨Caramel
3 tablespoons water,
½ cup sugar,
3 tablespoons unsalted butter
Melt sugar and water and cook until amber color, add butter, until all incorporated.
Directions:
Do 1 double and 1 single fold for the laminated dough. Roll 8 mm thick. Cut 10cm circles. Let them proof.
Slice the apples. Roll them into a roll.
Prepare the caramel.
Use 8cm mold, cover the bottom with foil. Pot 1 tbs of caramel onto the bottom, place apple roll in. Bake for 30 min at 375F
Remove apples from the pan, place them on top of proofed puff pastry circles. Sprinkle some sugar on top.
Bake at 375F for 18 min.
Enjoy with vanilla ice cream on top.
