The dungeons refer to the child dungeons, while Temples refer to the Adult temples.

What version was this performed on? I see the Gerudo logos are the original unaltered moon and stars, however the fire temple doesn't seem to have the original "religious chanting". EDIT: I was wrong. The chanting can be heard around 57:35 after the jingle for Darunia plays

No, it's emulated. The emulator core's 3D-rendering resolution (along with other graphical/rendering settings) are simply set as to mimic what a real N64's output would look like. For instance, the N64's native 3D-rendering resolution is 320x240. Also, TASes on real hardware have been possible for _years._ They just require special hardware to send the inputs to the console in realtime. TASVideos even has their own category for console-verified runs.
