Absolutely outstanding recipe - works perfectly every time! I've tried dozens of recipes for bao over the years, and this is by far and a long way the best!! I halfed the sugar for my personal preference and still turned out great. Thank you for sharing Micheal.

Can you mix some bao flour with purpose flour? Some people use a white egg for a dough. Do you agree? I love the way you make a dough. Thanks

It’s usually frozen after steaming.

I made it without filling. Just 40 gms dough. It is white,tender crumb, soft. Steamed 15 mins. I used the baobaozi machine for perfect mold. If I use filler I will use 45 -50 gms dough and shape to 5-5.5 inches round dough mould. Steam 15-20 mins medium high boil. Let it sit for 10 mins do not open steamer for 10 mins.

How would this recipe change if you don't have a machine? How long should you mix it for? And is it better to use a spatula or a whisk? Also, if I use all-purpose flour instead, should I use the same amount of flour? (thanks for helping this novice cook

Great folding technique. I know that your recipes are tried, tested and very precise, but I don’t have access to bao flour. Could it be swapped for an alternative like plain, bread or cake flour?

Try cake flour, or any other flour that has protein content around 8%.

Dumpling flour and bao flour are similar but not exactly the same. Both types of flour are made from wheat and are finely milled, which results in a soft and smooth texture for the finished products. However, dumpling flour is typically used for making dumplings and has a slightly higher protein content than bao flour, which is specifically formulated for making fluffy and tender bao buns. That being said, you can still try using dumpling flour for making bao buns, as the difference might not be too significant. The texture of your bao buns may be slightly different, but the results should still be enjoyable. If you find that the bao buns made with dumpling flour are not as tender as you'd like, you can consider using a mix of dumpling flour and all-purpose to achieve the desired texture.

Mr. Lim everything you made is beautiful and easy to follow and delicious 😊. I wish I can eat this is one of my favorite to eat until I had celiac. But sometimes I make for husband and friend and I cheat once in a blue moon and suffers after 😂😌 it’s just so hard to resist. When someone like me that like authentic food taste.
