Years ago, when Creole cooking really hit the scene, and K-Paul had his own television cooking show, there was an event in Concord, CA which featured all the best of New Orleans. Thousands of people showed up including K-Paul, and even Willie May herself. What an incredible day! I actually got to meet and briefly talk to K-Paul. A few days later I tried his 'Blackened Red Fish' in my own kitchen. The problem was that I was living in an apartment and the smoke from the Blackened Fish set off every fire alarm in the building! 🤣

We loved K-Paul’s restaurant in New Orleans! So sad they closed a couple years ago. Sounds like such a fun foodie event!

Bill & Lisa, very nice video & food looks delicious, Willie Mae's fried chicken is considered/rated to be in the top 10 in the U.S. & if you ever get down to New Orleans go to the original , is not a large place but completely remodeled due to the hurricane a few yrs ago that flooded/devastated that area. btw, Bill & Lisa you are such a great couple( match made in Heaven), Lisa is a great lady & you are a gentleman Bill. I have only been a sub for about 3 months but after watching videos , I noticed Bill always has Lisa go first on videos & my wife & I are the same way, after many years of marriage I still open doors for her, pull out her chair at tables when out to eat & we still hold hands sometimes when walking, etc... another great video folks

Get a bag of big lima beans & a couple big ham hocks cover with water , garlic powder, onion powder cook till tender. Make a pan of cornbread. Southern love.

Brennans make my mouth water. I recommend Abe Cajun Market restaurant in Houston, near Nasa.,I ate there today and it’s really good. SoCal has good food. Fun trip & always nice to see the kids. 😻👍🎉

I don't do New Orleans restaurants in California. The real Willie Mae's Scotch House is on St. Ann and Tonti in the 7th Ward. It is in the hood but I eat there about twice a month at least. It is the real deal.

How do the beignets compare to the malasadas in Hawaii?

They're close, yet different. Malasadas seem to be more on the airy side and less dense than beignets. Malasadas are sometimes dipped in granulated sugar, whereas beignets are dusted with powdered sugar. That all said, both are delicious.

I was in New Orleans for a few days last week and went to Willie Mae's Scotch House TWICE 😅 Have yall ever tried the glazed beignets at Antoine's Famous Cakes? It's about a 15 minute drive outside the city but they're so good, flakey like a croisant! Highly recommended. I can't look at powered beignets the same now.
