Step aside rice! Cauliflower is having it's moment & brining healthy nutrition to all your faves. Who said you can't eat healthy on a budget?
Cauliflower Steaks With Baked Potato
Ingredients
• 1 small head cauliflower, green leaves removed
• 2 tablespoons extra-virgin olive oil
• 1 teaspoon cumin
• 1/2 teaspoon coriander
• 1/2 teaspoon turmeric
• 1/2 teaspoon kosher salt
• 1/4 teaspoon ground black pepper
• 2 small russet potatoes
• 4 packets (2 tablespoons) butter
• 1 small shallot, finely minced
• 2 cloves garlic, minced
• 1 tablespoon capers
• 1 cup chicken stock
• Zest and juice of 1 lemon
• 1/4 cup parsley, chopped
• Butter, to serve
Steps
1. Preheat the oven to 425 degrees. Generously spray a baking sheet with cooking spray.
2. Cut cauliflower into 1 1/2-inch slices. Place on baking sheet. In a small bowl, combine cumin, coriander, turmeric, salt and pepper.
3. Drizzle cauliflower with oil. Rub with spice mixture. Roast for 15 minutes then flip slices and continue cooking for another 15 minutes until golden brown and slightly charred.
4. While roasting the cauliflower, add potatoes to another baking sheet and bake for 50 to 60 minutes, until easily pierced with a fork.
5. In a skillet over medium heat, add butter. When melted add the shallot and garlic and saute for 3 minutes. Add the capers, salt, pepper and stock. Bring to simmer and allow liquid to reduce slightly. Turn off heat. Stir in lemon juice, zest, and parsley.
6. Cut slits on top of hot baked potatoes. Add butter to each potato. Pour sauce over steaks and potatoes. Serve immediately.
Cauliflower Crust Pizza With Pesto (personal pan size)
Ingredients
Crust:
• 1 large head cauliflower, cut into florets
• 1 large egg, beaten
• 1/4 cup grated Parmesan
Pesto:
• 1/4 cup basil leaves, finely chopped
• 1/4 cup parsley leaves, finely chopped
• 4 cloves garlic, grated
• 1/4 cup Parmesan, grated
• 1 packet chili flakes
• 1/4 cup extra-virgin olive oil
Toppings:
• 1 large Roma tomato, thinly sliced
• 1/4 cup mozzarella
Steps
1. Preheat the oven to 400 degrees.
2. Bring a large stock pot with water to a boil. Add florets and cook until tender and falling apart, about 30 minutes. Drain and let cool. Working in batches, place cauliflower on a large clean dish towel. Squeeze out the excess moisture of the cauliflower. Don’t skip this step, it helps keep the crust firm.
3. Line a baking sheet with parchment. Spray with cooking spray.
4. In a large bowl, add the cauliflower, egg and Parmesan; mix well. Press the dough into a 1/2-inch-thick circle on the prepared baking sheet. Bake until the crust is golden brown and the edges are crispy, 20 to 25 minutes.
5. In a small bowl, add basil, parsley, garlic, Parmesan, chili flakes and olive oil. Whisk to form a paste.
6. Remove pizza crust from oven. Spread with herb pesto. Top with tomatoes and cheese. Return to oven for another 10 minutes. Remove from oven. Let sit for 5 minutes. Cut into slices and enjoy.
Cauliflower Fried Rice
Ingredients
• 1 large head cauliflower
• 4 slices bacon, cut into 1/2 strips
• 1 medium yellow onion, grated
• 3 carrots, peeled and diced
• 1 cup frozen peas
• 1 inch ginger, peeled and grated
• 1 tablespoon toasted sesame oil
• 4 cloves garlic, grated
• 1 teaspoon curry powder
• 1 packet ketchup
• 1 packet (1 teaspoon) sugar
• 2 packets (1 tablespoon) soy sauce
• 1 packet (1 teaspoon) Sriracha
• 2 tablespoons vegetable oil
• 2 eggs, beaten
• 2 scallions, finely chopped
Steps
1. Remove stem of cauliflower and cut head in half. On large holes of a box grater, grate cauliflower to form rice-sized pieces. Set aside.
2. In a large cast-iron pan on medium heat, saute bacon until crispy. Remove from pan.
3. In the same pan, add onion and carrots and cook for 4 to 6 minutes or until onions are soft. Add peas and cauliflower and saute for 4 to 5 minutes. Cauliflower should still be a bit crunchy.
4. In a small bowl, whisk together ginger, sesame oil, garlic, curry powder, ketchup, sugar, soy sauce and Sriracha. Add to the pan and stir to combine.
5. Make a well in center of pan and add oil. Add eggs and cook until scrambled. Add green onions and bacon. Toss and serve.

I looove these but you forgot my favourite... mashed cauliflower better than mashed potatoes in my opinion, way easier and wayyyyy healthier and cheaper. boil 1/2 cauliflower cut in florets, drain water, add salt and pepper, blend (or mash with fork if you're that poor) so so good and quick.

I made the cauliflower fried rice! Honest opinion: it was indeed very tasty. However, the whole thing took a while because of how much prep it took. I even used a food processor to speed things up and it still took a while. Also, you cant really buy a small portion of something like sesame oil or bacon, so buying whole portions was a need. I DID though go into fast food places and asked for free packets of stuff like soy sauce. So that reduced the cost too. It cost me in total about $14, but I have A LOT of left overs. With the left overs, it made it all worth it over all.

I see all these good looking cauliflower recipes, but when I have one, I can't resist my simple favorite. Cut the florets off the core and cut the florets into bite-size pieces. Cut the core into coins. Toss with olive oil, salt, pepper, turmeric, and cumin. Spread on a baking sheet and cook at 425F for 35-45 minutes, flipping once. Roasted Cauliflower, just that simple, it's incredible. The dry heat and the browning of the pan create amazing flavor, the last batch I did actually tasted _sweet!_ Very much like the Cauliflower Steaks here, but a little easier, IMHO, and because you toss it, you get great coverage of the flavor. No sauce needed.

Tried the rice today - substituted the bacon with chorizo (we don't have good bacon here in BG) and removed a lot of the hot spices (my BF doesn't like spicy much), it came out amazing. I recommend using BBQ sauce in the sauce mix. Btw, people, what Frankie doesn't say in the video is what insane amount comes out of this - my pan couldn't fit everything and I believe this will feed my boyfriend and me for a least 3 days with 2 meals a day! Thank you Frankie and Tastemade for digging up this awesome recipe from the depths of the interwebs for us ^^

A real struggle meal doesn't contain any fresh vegetables because in an urban food desert there aren't any grocery stores for the next 12 miles. The only veggies you're going to find is a can of mixed vegetables found in some bodega type conveniece store

Yes we have butter packets in all shapes and sizes. Squeeze packs, peel top little tubs and wrapped pats in foil. It's a wondrous thing all the condiments we can get in to go packets

Yep! We get free butter, but most of the time it isnt 100 percent real butter in the packets. Usually margarine, or country crock type stuff.

Even when cauliflower is in season, making fried rice from actual rice would most likely be cheaper. Making pizza dough from actual flour instead of cauliflower would also most likely be cheaper.

@@darkangel102860 That depends on how you define "nutricious" and what exactly you're looking for in an ingredient. Cauliflower is mostly water; which is good if you're trying to lose weight, but in terms of keeping you sated and providing you with energy, cauliflower is nowhere near as good as rice and flour. Cauliflower is a decent source of vitamin C, but with the shredding, frying, pressing and baking, most of that (and the other vitamins) would be lost in those recipes. And when it comes to minerals cauliflower can't hold a candle to rice and flour either. You usually don't eat ingredients on their own. You combine them to meals that provide more nutrition than any of their ingredients would alone. The trick is to find combinations that (taking nutrient losses through preparation into account) provide you with all the nutrients you need. Replacing rice with cauliflower you shredded and fried until it got a crips is replacing minerals with - given what exposure to air and heat do to vitamins - not much of anything. Considering that the peas and carrots provide vitamins, too and since they're not shredded lose less of them in the cooking process there's, using shredded cauliflower instead of rice is actually going to give you a less wholesome, less nutricious meal, that costs more to make. The first dish is not a "struggle version" of fried rice, it's a low-carb, low calorie imititation of fried rice. Nutrition-wise it make sense for people who are either trying to lose weight or for medical reasons have to avoid rice or watch their carbs. But to people who have no health issues, are happy with their weight and simply trying to get the most bang for their buck, this is not the best choice - unless they got friends or relatives that give them free cauliflower, that is.

I was in one of the Clyde's restaurants last Friday and on the menu there was a list of steaks that they offer with weights, sauces, cooking methods and prices. Under Fillet and Hanger Steak there was and option for Cauliflower. For a second, I wondered what part of the cow the Cauliflower was cut from, then I realized that they were offering an actual slice of cauliflower cooked like a steak.

Fried "rice"...awesome idea!!! Pizza...He said "for one person". I'm 5'10", 155lb (normally 140ish, but COVID) and I could eat all of that plus some more in one sitting!!! My lil' lil' brother is I think 5'11" and is 128!!! IDK he was that thin!!!

I´d like to see a breakdown of the calories on these meals. Looks to me like most of them are under 500 kcal and the ones that aren´t seem to get their calories from oil/butter.

I think the pizza would be tastier if you used fresh basil instead of parsley. I happen to be a fresh basil fiend and grow it so it's super cheap. Have a question, where do you get cauliflower so cheap? You used an entire head for the pizza but said it cost $1.99. Even at Aldi's, cauliflower is at least $2 a head. I love cauliflower and your recipes, so I want to shop where you do!

Love the series, but I don't get the package drawer: in order to have it full of fancy things like Sriracha, soy sauce and butter, I have to eat take-out or at diners and restaurants regularly - which I should avoid by cooking those struggle meals since it is too expensive. chefkocher1 the idea is over time you eat out here and there and accumulate a stash of packets. If not it really doesn’t matter because those items aren’t essential to the recipe. It’s just a tip for those who may end up throwing that stuff out

@@cade4d yeah but my first recommendation to anyone struggling to make ends meet would be to stop eating out entirely. But I understand now it seems to be a culture thing: 1. Fast food in the US is way cheaper so you can afford to eat out at a budget. 2. Where I'm from condiments are rarely available: salt, pepper, sweetener at the most 3. Venues deliver your order with the condiment and you have to ask for more. 4. If and where it is available for free, it is frowned upon to stuff your pockets.

I hear what you're saying but sadly, at least in the US, it's pretty cheap to order take out - if you don't have the packet drawer stock up your pantry, that's the short answer.

You basically made 'pistou', which is the French version of pesto, but lacks the pine nuts and _technically_ shouldn't contain parmesan, but crème fraîche instead.

Yeah, go out once or twice a month and stuff your purse full of condiments, jelly packs, and butter pads. People do treat themselves sometimes, even if they're poor.

Yeah, where i live stuffing your pocket with packets would be considered extremely rude if not stealing. Not to mention there are almost no restaurants here that even have free packets.

Sorry, Frankie, but you were right in your first statement regarding "stealing butter from the diner," because it's a sure thing that you're not going to return 'used' butter, so it's not possible to "borrow" it!

Does riced cauliflower have a similar texture to rice? I remember eating quinoa once, thinking it actually was rice. Turned me off to that stuff forever. Ugh!

It's a great condiment and it lasts forever. It's a mixture of chili paste and garlic and goes great on eggs, in soups, on pizza, etc. I'd recommend getting a small bottle. I had a jar for about two years that I finally got through, so it's worth the investment.
