Thanks Dale. I couldn't help but think of my pestering you about your cheeses in the beginning. I never tasted of any cheese besides mozzarella until I was in my 30's! I've missed out on so much. I never had garden veggies until then either. So there's no time to waste. Much love from Kentucky.

I believe that coating is PVA. We use it as an adhesive in bookbinding.

It looks like a success for sure, Dale. It’s great to see the follow-ups of your cheese-making ventures. I got a copy of your cheese-making book out of my local library and am checking out the recipes. I’m going to ask for a sous-vide for my next birthday. It certainly seems like a reliable way way to maintain a consistent temp.

Thank you Karen the sous vide makes the whole process so much easier not any faster but it helps you get the temperatures so accurately . Mine is the cheapest one on Amazon as I don't have any intentions of using it to cook with.

Bravo, bravo, bravo!! Just discovered your channel, and so excited to make this cheese. I am in nearly your exact range of expertise. Caerphilly is brand new to me, too though! I've made Red Leicester, and other Edam type cheeses. I think this one looks perfect! Going to go find one of those molds! I have an Edam mould that is similar and produces a nice spherical shape, but it doesn't have the removable liner, which is a great feature. Love this Caerphilly shape, and I've just started making 4lb cheeses. Also just ordered a Sous Vide yesterday, and can't wait for it to come. It's got to be the best new tool for a cheesemaker, ever. Just found out about it from another cheesemaker on another channel, so great to see you using one too. Brilliant! Thank for the video. So glad it worked out. Can't wait to try of myself! Cheddaring, is a lot of work...but this cheese looks so much easier. Thanks again!

I made this one when I was living in Bangladesh as it didn’t have to be aged long. Mine had a bit of a lemony hint to it. Wasn’t sure if that was standard for it, or not, I really liked it though, and I’m looking forward to making it again.

I enjoy cooking and usually buy sharp cheddar from a store in Wisconsin , They have a selection of aged cheese 10 to 12 year. I like using the aged cheese in casseroles, it only takes a small amount to give the flavor to the whole casserole. Best in broccoli casserole :) After watching your videos it has made me want to give a try at making cheese.

It looks like a perfect Caerphilly to me. It’s not got the complexity of a Cheddar but it is still a good cheese. A similar cheese to Caerphilly would be a wendslydale which comes from Yorkshire.

Thank you Lori you need someplace that is around 54 degrees to age the cheese . A cheese fridge is just an ordinary fridge running with a special thermostat , that you can buy from cheesemaking supply places, which lets the fridge run warmer than normal. Mine is a small bar type fridge but any second hand fridge would work.

Yummy, In the United States, I would compare it to a New York White Cheddar. It’s better if it’s more crumbly, or dryer.

It reminds me of making miso! I've seen miso making on Bon Appétite, Brad makes it. I LOVE cheese, but I never had this kind before I became vegan, or since, of course. I'm glad you enjoyed it! Nice knife ! i need one like that with a full tang . The one i have that style broke out of the handle . I see in the back ground you have a kitchen aid toaster oven . How do you like yours and have you had any problems . ? I have one but the timer nobs dont always shut off ,right from new have to watch it of the house fills with smoke ,and then it gets noisey . Cheese looks great !

Looks like wonderful cheese, but nothing like any Caerphilly I ever ate. It is very white, not as dry and hard as yours, doesn't have a hard rind, is definitely crumbly, with a pronounced fresh acid taste, and is eaten from about 3 weeks.

I used some of the one I made in Mac-n-cheese for my kids. It was mixed with some other cheeses, but I felt the Caerphilly made a very nice addition. Not sure how well it would melt by itself.

I love to see this, but i'm having difficulty with the sound. since changing your setup the sound quality is difficult to listen to. there is background noise and then everything mechanical is far sharper than your lovely voice. You sort of sound like you are in a tunnel. Being partially deaf, it really takes much of the enjoyment out of viewing the videos. I have to also admit, i'd rather be over your shoulder like an old friend, then feeling like i just sitting in the audience with strangers i don't know. Being staged as it is now, i am sure it is easier for you, but it definitely loses some of its "friendliness". Nonetheless, thank you so much for making these videos.

@@DaleCalderCampobello it is probably because my hearing is so bad. I have to crank it up to the highest audio setting and i hear something that sounds like a fan over your lovely voice. LOL and actually i liked the much closer view previously... but that is just me.
