There is a Lancastrian lady in my social circle who told me that my home made Caerphilly really tasted like a Caerphilly. She asked me then if I could make a Lancashire cheese -- and I suspect she would have a pretty discerning palate on this one. I think I will go ahead and make one now: this taste test is VERY encouraging!

You really do check all the comments - I commend you for that!! I just turned 18 and got my cheesemaking kit - my first cheese is going to be a Lancashire just like this. I’m gonna compare my homemade to the store bought version and see how accurate I can get it. Cheers! Keep making videos!!

As a Lancastrian, brought up on Lancashire cheese, I'm pleased you like it. There's a lot of variation between makers but from your description, yours sounds typical. Did you know that, originally, Lancashire cheese was made by mixing curds made on 2 or 3 separate days? I think Kirkham's raw milk Lancashire might still be made that way.

I'm from Lancashire but i live abroad and cannot buy Lancashire cheese, which is favourite cheese. Your videos on how to make it are brilliant, one day soon i hope to make my own Crumbly, creamy, sharp and very delicious is exactly how Lancashire cheese should be. It looks like the real deal

Lancashire crumbly as my grandma always calls it here in lancashire. Sometimes get it where you struggle to slice the cheese without it just crumbling to pieces. Love the videos! hoping to try and make my own cheese soon. Can't decide which one to try

If this 'amateur' cheese was at display in my local cheese shop, it would definitely draw my attention. Nice uniform shape, rustic looking consistency. If only KZbin could transmit smell and taste.

I've heard cheese mites can get on your cheese and also they're actually added to some cheese. Have you ever made "cheese mite" cheese? What is the purpose of adding them? Love your videos. This my new fav channel.

5 months is a fairly long time for Lancs. Buttery and tangy at the same time. .

I read that the younger it is, the crumblier it is and the older it gets, the creamier it gets.

The crumbly also uses a pre made bacteria starter to quicken the process. It isn't that traditional but I like the crumbly for melting. Heated up with milk in a pan you get a stringy melted cheese on the bottom and a lovely cheesy milk to dip bread in. Need to be careful and do it slowly as it will split. I love it with smoked bacon

I made my first cheese with MA4001 and I added lipase. It came out kinda sour but tasting like feta with a cream cheese consistency. Is lipase a catalyst for the culture?

Since mine was spreadable I put it on toast open face with some ham and olives and poblanos. I used dark mustard on one and asian bang bang sauce on the other.

By the time Lancashire cheese gets to the mature (tasty) type it's a fierce cheese. Unlike cheddar it's nice without being mature even in the creamy version.

It looks nothing like Lancashire cheese it looks way too hard, the texture is the most important part. I have not seen any true Lancashire for more than 30 years. The closest in taste and texture of the lancashire cheese of childhood toasted is to add a bit of fetta and a touch of extra mature cheddar. The memories of childhood came flooding back along with that amazing soft creamy taste that leaves you longing for more. We were not poor like today eating cardboard food.
