Thank you Ron and Justine. Loved seeing the various receipts and methods. My recipe is from the 1880s Scotland. My great-grandma passed it down to my grandma in Canada and then to my dad. I've never seen anybody make it the way we do. The eggs are separated. The yolks go in with the wet ingredients. The dry ingredients go into the wet ingredients. The egg whites are beaten until stiff peaks form and then gently folded into the wet mixture. It makes for a light fluffy pie rather than a dense one.

I currently grow Seminole and Cherokee Tan pumpkins - Small and tasty, and they store well. I like to fill them with a custard mixture with raisins and apples. Glad you are giving the chickens the pumpkin seeds - they will usually eat any part of the pumpkin that you give them, but the seeds are a natural de-wormer!

My ex-husbands ancestor was the captain of the Mayflower when it returned in record time to save the colonists and on arriving to the starving colonists with food provisions there was debate as to whether they would fast in gratitude. He argued successfully that instead they should feast in gratitude and have a “Thanksgiving” and invite those their neighbors. That story always moved me. That they chose to celebrate being saved from famine rather than chose to further prostrate themselves. A story of hope and gratitude, rather than fear and prostration.

Just as a side note.. there are versions of Pumpkin Pie that is a combination of the Pumpkin, along with certain type of squash, which gives a depth of flavour . :)

Im wondering if the custard one would've been more palatable if it was served chilled. I've discovered not only is it far easier to cut the pumpkin in half,take out seeds & roast,but it gives it an added carmelized flavor & dries the pumpkin a bit more. But that second pie looked acceptional. Im so impressed with how well they all turned out baking the old way.

The comparisons were very interesting! Ron looked so handsome in his red vest and cravat, and Justine beautiful in her dress and white shawl. The second pumpkin pie was amazing, thou I love that Ron had eyeball daring when he made his pie. It doesn't seem farfetched that the pilgrims could have roasted a pumpkin in the ashes until tender, then mashed and added the other ingredients and poured it in a pumpkin bowl. But, I can see where just pouring the custard in the pumpkin, and letting the inside cook intact to eat with the filling would be more convenient. Very nice job on all the pies and I too thought that Townsend was going to be your guest. It was fun seeing Arthur in a friendlier light and I do hope he lowered your rent. Love everything you do as it is always done so well. Happy Thanksgiving Blessings!

In Plymouth Massachusetts today the recreated pilgrim village had a period reinactor bake a pompion pie the old way when we visited there a few years ago. Many New England recipes have been passed down through families for generations.

My personal favorite pumpkin pie recipe comes from "The King's Bread, 2nd Rising - Cooking at (Ft.) Niagara 17-26-1815. As to the 1620 version, this was a technique used by the Native Americans, and many NE Cultures would scoop out the cooked pumpkin and add maple sugar, some kind of animal fat, and even broiled deer or other meat. Oh man I had been late coming onto the live but rewatched the video now and it was great. I can't believe I was right. I had guessed the landlord in the other video as your special guest. That was fun and the pies looked real good, especially Justine's. I liked the crust on top. The earliest one in the pumpkin was so interesting. Ron good job on yours too. I love pumpkin pie. Probably my favorite pie. My favorite dessert is custard. The first one sounds good except I don't like clove or ginger. It sounds like it would be good as a pumpkin cream brulee.

Carolyn's pumpkin pie 1graham cracker pie crust 1 can Libby's pumpkin puree 1 can sweetened condensed milk 2 Tblsp pumpkin pie spice 1 pinch of salt 1 tsp of vanilla Preheat oven 350 degrees. Pour mix into pie crust. Place on baking sheet. Bake for 30-45 minutes or until center is not giggley or wet. Cool completely before serving.

Pilgrim pie hands down is my fave pumpkin pie, ever since I started making It I was hooked. Just a tip for making it in today's world I'd add additional spices and sugar to the custard and I also drizzled caramel in the slices 😁🧡
