On this video, I demo how to make mahamri which is basically mandazi but with yeast instead of baking powder or self raising flour. They have a different taste because of the yeast but the recipe is super simple and I have broken down the technique on how to get it right.
Ingredients:
450g All purpose Flour
11g yeast
6tbsp Sugar
1 Tbsp Margarine/butter
1/2 Tbsp Cardamon Powder
1 Cup Warm Milk

Hello chef .. you have good recipes,but for home recipes please use cups,tablespoons and teaspoons more for measurement rather than grams because people at home have basic tools nothing to measure grams with making inconcistency in our results

But you can add a little baking powder about 10gms to speed up the proving process. Use a good brand of yeast because some take long. I you use coconut essence that gives it a sweet taste. Use lukewarm water or milk to speed up the proving process. After rolling in to small balls allow them to rice again.

All purpose flour 450g Yeast 11g Margarine 50g 1/2 tbsp of cardamon powder 4tbsp sugar Mix everything Add the margarine after mixing- mix completely Pour milk after making a small hole at the center Knead the dough 1hour proof it Knead again Divide into 5 balls Cut them into triangles then fry

I never know why my mahamri taste different kumbe I make the dough and leave it overnight it's abit sour.i had mixed the dry ingredients then we got to that part 😄😄I stopped at that....will give you a feedback tomorrow morning

Use my recipe and procedure and see how it is. The important part is have some fat/oil when making the dough

So the secret agent that made them hollow is to add margarine apart from yeast! Mine used to come out like mandazi.But that's not what I wanted.

I have noticed. You didn't use baking powder. It's not a must when making mahamri or because already we use yeast??

Hi, depending on the size of the round shape you make, you can get 12-16 pieces or if small up to 24 pieces
