Tasty Vegetarian Nachos with Jen Richards Writer
INGREDIENTS:
Cuban Beans Mix -
1 sliced onion or 1 cup frozen sliced onion
2 Tablespoons Cumin seeds
1.5 cups chopped capsicum, canned or fresh
375g dried Black Beans
1 - 1.5 Tablespoons Chipotle chilly in Adobo sauce
2 Bay leaves (remove before serving)
Salt and Pepper to taste
6 cloves or 6 teaspoons minced garlic
Approx 1 Lt water, enough to cover the beans nicely
Nachos -
Plain, unsalted corn chips
Shredded cheese
Salad of your choice
Guacamole
Lite Sour Cream or Plain Greek Yoghurt
Jalapeno peppers (optional)
