I think it depends on the goals and workload of the food cart. Like you could get a fully automated machine with several groupheads, but if you aren't serving that many people it may not be worth the investment, especially if the cart is "off grid" and battery power needs to be factored in as well. I think it's also part of the experience of these smaller food carts to have a more personal touch by hand pressing the shots and gives a bit more control. My thought is, if your goal is to expand, you'll probably hire employees and open up a storefront. If you simply want a small business and low stress, I see how this concept works keeping it simple. I'm really not sure the feasibility of such a business in the USA though, because the starbucks lobby is strong, and they would consider this model a threat to their coffee shops.
