Ingredients:
- 1 kg skinless chicken pieces (breast or thighs)
- 1 cup cashew nuts
- 1/2 cup yogurt
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp black pepper
- 1/2 tsp salt
- 2 tbsp lemon juice
- 2 tbsp oil (butter or vegetable oil)
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp garam masala
- 1/4 cup heavy cream or half-and-half (optional)
- Fresh coriander leaf for garnish
Instructions:
1. Marinate the chicken with yogurt, ginger paste, garlic paste, cumin powder, coriander powder, black pepper (if using), lemon juice, oil and salt. Refrigerate for at least 60 minutes.
2. Soak cashew nuts in water for 30 minutes. Drain and blend into a smooth paste.
3. Heat oil in a pan/kadhai over medium heat. Add cumin seeds and coriander seeds. Let them sizzle.
4. Add onions and garlic. Saute until the onions are translucent.
5. Add the marinated and roasted chicken and cook.
6. Add the cashew paste and 1 cup water. Mix well.
7. Reduce heat and simmer for 15-20 minutes or until the chicken is cooked through and the sauce thickens.
8. If desired, add heavy cream or half-and-half to enrich the sauce.
9. Garnish with cilantro and serve with rice, roti, or naan.
