The world's leading raw, vegan Chef revealed the real Fountain of Youth and provided a
wakeup call that if you are sick, or not feeling well, it's probably of your own doing.
Starting as a traditionally trained chef, Chef Kenney had his first restaurant in New York by the time he
was 28 years old, focusing on regional Mediterranean cooking. After a journey through Foie Gras and
Strip Steak, and being named one of the Ten Best New Chefs in America by Food and Wine magazine,
he realized that the greatest use of his talent was to develop and prepare whole foods that were alive
and healthful. Now, in addition to serving life-giving, gourmet food, Matthew has become the world's
leading raw, vegan Chef and also educates both people who are looking for a better life through health
and wellness as well as new chefs from around the world at his academy.
In the spirit of ideas worth spreading, TED has created a program called TEDx. TEDx is a program of
local, self-organized events that bring people together to share a TED-like experience. Our event
is called TEDxOKC, where x = independently organized TED event. At our TEDxOKC event, TEDTalks
video and live speakers combine to spark deep discussion and connection in a small group. The TED
Conference provides general guidance for the TEDx program, but individual TEDx events, including ours,
are self-organized.

In grade school, I was the smallest kid by weight, yet also the strongest and fastest; living on my Cherokee, traditional foods of Hominy (corn), Beans & Squash. In 1975, I was talked into switching to the Paleo Diet, "to get bigger & stronger"; ten months ago, at age 50, I almost died from Heart Disease, High Blood Pressure, Type II Diabetes, Gout and Prostate Issues. I switched to VEGAN (no salt, no oil) and have completely reversed or cured ALL of the above Diseases and Issues

i have been diabetic since birth (47 years on standard american diet) i dropped my insulin intake from 70 unites a day to 25 units a day in only 5 months on a raw/vegan diet... my gastroparesis of 15 years disappeared,,,, i have never felt better and my blood sugars on 70 units a day averaged over 280.... today it never climbs over 148... again the only thing that changed was stopping eating meat products..

@rawchefdan I went to Quintessence three times in a week the first time I went there. I was already a vegetarian, but quickly transitioned into a raw foodist. That place changed my life, so much for the better.

7 years ago i had 5 surgeries on my eyes for diabetic related retinopathy... they had been working up until 5 months ago to get my eyes to stabilize and stop bleeding...my visit last week to the eye doctor revealed that my eyes were stable and that my eye sight had dramatically improved... the only thing that changed was dropping meat and cooked products from my diet... i don't eat anything from a can, jar or a box... i only eat raw: fruits, veggies, nuts, seeds... and i'm totally satisfied...

my mother ate a SAD diet her entire life.. she had T2 diabetes, and died of cancer...the mayo clinic and fred hutch cancer center in seattle tell all cancer patients to eat a raw/vegan diet... it they suggest it, there certainly be a reason...

It doesn't say much for the American population where the majority polled don't know what BMI is, what constitutes raw food or what body fat levels are. I once visited my aunt in Alaska, she was as fat as a cow,well off middle class having a lawyer husband and she ate crap and did no physical work or exercise. One day while staying with my aunt, I thought I would walk downtown and back(about 3 miles each way) . She told me it was too far and not good to walk such a distance(I was lean 35 yr old).She insisted she drive me as I could wear myself out. All this tells me a lot of the population has been so dumbed down and don't seem to be able to think about important issues.

Now I know for a fact that some plant based food are more easily digested and we receive more nutrients from some plants when cooked properly, it helps the stomach break down the food particles easier.

There are also, of course, few culture that have had so much access to food. In the past, meat has been a needed source of protein and several minerals, and the long-term damage done by its consumption was a fair trade-off for not starving. In our culture, it is no longer necessary to eat meat for nutritional reasons, and we can easily forego the negative impacts by not eating it. I'm no vegan religionist, and not a purist in my own diet either. Just making a point about culture.

You know its cheaper for me to make organic donuts from scratch than to buy processed GMO filled donuts. You should grow your own produce, greens are incredibly easy to grow and are incredibly high in nutrition. Start with greens and herbs and then move up to more difficult foods to grow. Did you know many of the things we consider weeds are actually edible and highly nutritious? Dandelions are incredible healthy. Pine needle tea contains more vitamin C than oranges.

He asked the rhetorical question, "So...how do we prepare it?" While I don't recall him actually giving an answer, he did say that it required a lot of creativity, and his classical training certainly helped. I love raw food, but I don't have the 5 hours a day it would take to shop, choose, and lovingly prepare these beautiful dishes. However, there is a fast way to go raw - juicing. Guess I'll stick to that.

+Patricia Leary juicing is great! It's all about creativity. I think the healthier foods you choose to buy, you begin to learn how to be creative in preparing them. Shopping for them, the drive home, and prep times will be less than 5hrs. In fact it will be faster to do this considering you'll be excluding meat.

my cholesterol while eating meat was 241 for over 25 years... i took all kinds of prescriptions that made my legs hurt during that 25 years... in just 3 months on a raw/vegan diet (prescription free)my cholesterol dropped to 167, again no prescriptions... the only thing that changed was stopping the intake of animal protein... it is my opinion that high cholesterol is a negative health impact.. you tell me..?

My doctor told me that your body creates the harmful (when high) LDL cholesteral regardless of whether you eat animals, their milk or eggs. Consumption of animal meat and products accounts for a very low percentage (15% or so) of one's total cholesteral. The rest is amnaged by eating healthy foods.

Unfortunately the animal products market controls the economy. That way, they get more money, and with that money they can publicize and make people believe that they need those products to live a healthy life. But we can change that, all we got to do is to stop their "private economy" ( of selling animal products) and start to eat what is good for us, vegetables and fruits. That's the only way that we have to force the major companies and supermarkets to change their prices and their products.

suggest add reading up on Ayurvedic traditions and seasonal food intake. The 105 degree Celcius is prolly not wrong, but in winter some info suggest cooking your hard greens. Ultomately its about finding your way :-)

i am only monitored by my PCP because she want to know why i am doing so good... she "had doubted" that i could get enough protein on a raw-vegan diet... "she" proved her self wrong... because this was a new diet for me... "she" wanted to make sure i was getting everything i needed (that i was nourished) the doctor was uncertain... because they don't get enough nutrition training in med school.. so she did as an good MD would do and she checked...only to find that everything was perfect.. :)

Animal products as long as they are organic, may provide nourishment to a starving body, but on an energetic or spiritual level, they are destructive. Feeding yourself on the flesh of a tortured animal who has died in fear and pain is not exactly conducive to emotional or spiritual health. Or do you want to dispute the body/mind/soul connection as well?

i am followed very closely by my doctor... she checks all my levels of micro-nutrients (what our body needs) not once have i been deficient... the one supplement i take is vit. B12... but that is all i cannot get from veggies.. my protein levels now on raw vegan are better than ever before... it is important to eat a wide variety of fruits, nuts,seeds,and veggies... not the same every day or you will be deficient... we are all at different levels on our own path.. find what works for you... :)

vanwebb, are you really paying such high prices for fresh produce? And is that by the lb. or some other criteria? Produce can be high here in TX but not that high per lb. The cost per lb. for animal products is still much higher. A gallon of milk has gotten to be $3 or more and that is quite high to me! Once you stop buying animal products, frozen meals and other prepared products to make meals, you can see a serious reduction in your expenses. At least you'll have the money to buy produce, fresh or frozen.

well balanced raw vegan diets do not lack anything except maybe vit B12... you can get minerals from Pink Celtic Sea Salt and other natural sources... again, i have been raw for almost 6 months ... my levels are checked monthly... and i have yet to be deficient.. :)

the chronic lung condition i had for nearly 2 years that the doctors could not diagnose, they thought i had CF... went away immediately when i dropped dairy and meat and went raw vegan... doctors could not explain it... you tell me...? every problem i had, and there were many, are gone... except i still use a small amount of insulin... i was on 12 prescriptions... now only 1...miracle...? how about RAW/VEGAN Diet...

Its more important to eat high carb, low fat then 100% raw. To any beginners out here, try to incorporate raw fruits and vegetables (not too much nuts and seeds) as much as you can and want, but make sure you eat enough calories. And if you crave cooked food (old habits die hard) or you are tight on budget, eat high carb, low fat cooked meal once a day or less. And raw cacao is not "superfood", its a stimulant, so if you have to eat it, eat sparingly.

That's sizeist language and untrue. Larger-bodied people with potentially health-endangering excess of body fat often have an eating disorder or disordered eating, using food as an addictive substance to self-soothe from emotional or physical pain. It's unfair of you to categorized them using sizeist and ableist terminology. What's needed is compassion, understanding and better and more resources for those to get the support and treatment they need, not increased stigma through labelling.

by using the word affluent, are you implying that you have to be wealthy to eat raw-vegan...? facts are that i save money each month and i eat more volume of incredible food that i make my self... vegan is really a conceit of the determined and those willing to take the steps to heal themselves.... much good health to you my friend...

I don't know that there are negative health impacts to eating meat. Some people think its cruel to eat animals and so have declared meat to be unhealthy. Religious zealotry is driving the science in many cases. That being said, Westerners eat too much of everything, meat included, and much of that is tainted by commercial practices.

Almost everyday, vegans and vegetarians come to us facing severe heath issues brought to them by this lifestyle. An ancient vegan and vegetarian myself, I claimed my health back by eating fats, meats and fish and going Low Carb High Fat. Bringing others back to health and sanity is a real blessing. It's funny I used to speak like him, years, ago. Understanding insuline resistance and carbohydrates intolerance is much more important to one's health then some vegan pseudo-ethics. One day this young man will apologize to others that he switched to vegetarianism. LCHF does it right when it comes down to the chemistry of our nutriments needs.

I agree. Ppl need to get educated on how the body works, about nutrition. Not to be told do this do that one more time. Once you know how your body works some eating choices become obvious. I've started to learn about nutrition because I want to know what everything is really about, is vegan OK or not, what's so bad in my current alimentation and so on. Got tired of ppl saying this is bad or this is good without even giving arguments and explaining what it's all about.

Thank you for saying that. There's so much misinformation being spread by vegetarians and vegans. They are diets of malnutrition. They also incorrectly attack meat as the enemy. Good quality grass fed meat is essential to health. Sugar, starchy carbs (especially grains) and vegetable (seed) oils are the true enemies. Chemicals and drugs don't help either.

Neurologist Dr Natashia Campbell McBride pointed out that vegan diets are cleansing, while meat based diets are nourishing. It depends on what a person needs - if they are toxic, they may need vegan for a while - if they are weak, they made need nourishment from animal products. Its not black and white - good vs bad.

well. autism?wtf, serous. autism isnt an illness, its a kind of being. there seem to be people who react very crass to glutein or kasein-so a vegan, glutenfree-diet could be a solution for a few people-but not for me. my aspergers doesn't go away.. if i eat vegan (although my Dyshidrosis does-and thats enough for me to change because Dyshidrosis hurts ME a fuckton)

There is no evidence of this. What enzymes are destroyed by cooking? Food doesn't contain enzymes that we need to digest it. Our digestive system makes its own enzymes for digestion. What negative effects are there of cooking? Why would I eat these elaborate processed raw foods when I could eat a healthy balanced diet?
