Tonight for dinner im making my famous tequila lime pasta.
i made hand-rolled tagliatelle but you can use a package of pappardelle or fettuccini if you want.
ingredients:
pasta
chicken (i used breast) cut up with garlic salt, tajin and parmesan cheese coating it.
2 bell peppers of different colors
1 red onion
2 cloves garlic
1 jalapeno
4 limes
1 cup chicken stock
1/4 cup tequila
1/4-1/2 cup lime juice
parmesan cheese
method:
make the liquid with the chicken stock, tequila and lime juice and zest some of the limes in there.
the bell peppers and red onion cut them in long strips and save half for cooking and half for finishing
slice the garlic
remove ribs and seeds from the jalapeno and cut it into rounds
for the sauce, put butter in a pan and cook the garlic and jalapeno , not too long, just until fragrent, then add the liquids, bring to a boil then turn low to simmer to reduce the liquid
in a heavy pot, cook the half of the bell pepper and onion in butter, then add the chicken and let that brown, cook it a bit more then add the liquids and turn it down to a simmer to keep reducing.
cook the pasta, then add the pasta into the sauce and mix it all up, then add the reserved bell peppers and red onions
