Lua in the context of the game is a scripting language that many games use to offload various automated processes as to cut down on the number of things their own engine has to do, thereby increasing the speed at which they can run. Effectively the engine doesn't have to spend time doing these automations and thereby take longer handling other stuff, as Lua would run separately. It really made things work well when we started getting to multi-core CPUs.

In the ACTUAL context of the game, LUA was implemented so people can create addons with functionality in the game outside of just models and maps. This includes custom entity types, weapons, player actions, enemy AI, vehicles, etc. Without LUA, or any other non-native programming/scripting language, developers would need to use C/C++ to create them and it's not a simple as just installing LUA files.

It's actually a "support" language, although it can technically be used on its own. It's basically meant to take over the most simple/repetitive tasks so the game engine doesn't have to waste resources on them itself. Usually multi-core processing will dedicate a core just to Lua processes, it increases performance massively. It's also been used in the Minecraft Mod "Computercraft" and Roblox.
