the reason the water is left running is because of all the heat, the "needed cold" water would be warm, thats why he tossed it at one point. I used to think it was a waste until I was told the reason.

They use it to blanch the vegetables after pre-cooking them in hot water and also to clean the wok. The wok is a very nice cooking tool. I cooked with one for 10 years of my life and the one you use becomes personal to you.

I did this job for 5 years while I was a teenager in a luxurious taiwanese restaurant in Quebec city Canada and miss cooking with multiples wokes at the same time, im really gratefull of this job because I learned to work efficiently under pressure and it still serve me to this day. Huge respect to the cook , he know his stuff.
