For home eating, you can dial down the flavor super charging. In a contest, a judge eats 2 oz tasting pieces. Figure 6-8 entries for each of the four meats (chicken, ribs, pork, brisket) and sometimes Anything Butt and dessert and that's a lot of food (2 oz X 6 entries X 4 meats = 48 oz or 3 lbs of protein). You can't taste salt after ribs so to win a savvy competitor will have to amp the flavors in the later entries. Do not do this at home

How would a simple 1/2 white vinegar. 1/2 Apple juice, mixed with The rub you use. As an Injection, compare to these commercial ones.

Hey Joe, only way to know is to try. It costs about $1,000 in expenses and fees to be in a contest. So after trying it in 10 contests against the top teams in the world, you will have several data points to compare your recipe against the top ones. Alternatively, you can save $10,000 and perhaps watch this guy's video and learn from his 300+ comps experience and KCBS TOY third place pork overall among 5,000 teams to see if his methods will work for you. :-)

Next is chicken injections and brisket injections. Short answer to your question is that all pork injections have phosphates and salt so the meat will plump and be moist and salty. My pork was great...I experienced serious problem.with my brisket...attempted to do hot n fast, but it seems to me it was very lean, so it ended up dry and did not like it. I used cattleprod ans smoke blend from kosmo to inyect, used your rub on it an the flavor was great...not the texture,mmm😥😌😥

So, in your conclusion, depending on your mood, smoke, and probably most important, your rub; will overall determine which one of these injections would work best for you, since they are all pretty good injections in your opinion. I guess I will go with Butcher

Harry, I’ve just listened to your podcast & had to stop and reflect. I saw an episode with Aaron Franklin smoking brisket 3 ways, foiled, butcher paper & naked. He had a guest pit master that I’d never heard of. Enjoyed the episode, several months later I saw the guest in an elevator in Manhattan, still not knowing who he was. I told him I’d seen him on PBS with Aaron Franklin. We chatted BBQ for a good 10 minutes but in NY everyone’s in a hurry. It wasn’t until I got home to watch the video again did I realize that I’d just met BBQ royalty. The gentleman was John Marcus.
