the 'mexican' part of the mexican chocolate is pretty important, and british dark chocolate doesn't necessarily work as a straight substitute. mexican chocolate typically has large granules of cane sugar (which has a more caramelized taste than the white beet sugar we get out of the pack in the uk) and ground cinnamon in it, so you're missing out on some of the flavour. in the UK you can find it in some specialty shops, or online at places like souschef. I would also so that the pinch of cayenne really does need to be a proper pinch. I often put in around 1/8 tsp for 2 people, though I admit i do like it spicy. as for the whisking, I generally stick my whisk straight down in the pan then roll it back and forth quickly between my palms- much faster whisking with way less arm tiredness, though beware this can be VERY messy. you can also just go at it with a stick blender, or even milk frother, seeing as that's really what you're trying to do- create microbubbles to improve texture and flavour

Best hot chocolate I have ever had was in Bruges - given a bowl of hot milk and my chosen option was an "Aztec" which had a stick of cinnamon, 90% chocolate and dried chilli - just let it steep to your taste - amazing

You must try Ram , Spanish ready made drinking chocolate sold in one litre tetra bricks. It is absolutely incredible, you can drink it as it is, very thick, or add extra milk but I suggest you try it just as it is. Fantastic.

Can I suggest that you try Ciobar - it's an Italian hot chocolate "pre-mix" and its delicious (but as I'm Italian I may be biased in saying that). It's got both white and dark chocolate version. I grew up drinking it and it's one of the best I've ever had!!

Lockdown was when hubby and i discovered real chocolate hot chocolate. As in putting chocolate in hot milk and cream. It was a naughty evening treat which thankfully didn't last long as that is A LOT of calories before bed. We have it as treat now and then. Doesn't compare one bit to powdered hot chocolate.

Have you tried Knoops? My partner tried a hot chocolate from them for the first time recently and he thinks it's the best one he's had. They use chocolate flakes and their menu is based around chocolate percentages, it goes from 28% white chocolate to 100% extra dark chocolate. You can add extras like spices, herbs, fruits etc. I'm not a hot chocolate fan so I can't comment on it. I've just had a look and they have a lot of stores in London ☺️.

I have been on such a quest for finding a good hot chocolate since Christmas. I purchased myself a Velvetizer for Christmas and I will say I didn’t like any of the sachets from HC. I’m American so they were all too bitter for my taste but I can’t wait to try some of these recipes. So far my favorite chocolate I have found has been from Williams Sonoma. Just flakes mixed with milk.

two weeks late but from an actual Colombian. A. you gotta use a hot chocolate in a bar from preferably from a brand like Corona (Maybe in amazon you can buy it). B, the cheese ought to be a more mature cheese that can melt, sometimes a gouda works good. and the cheese is not supposed to dissolve in the chocolate. you are supposed to eat it melty ish. so like a bite of cheese and a chug of hot chocolate. Honey a weird add on. we add a cinnamon stick and some cloves, but its not necessary. for measurements, i usually go: for one cup of hot chocolate, half a cup of milk and half a cup of water and a stick of the chocolate. It usually already has sugar in it but its not necessarily a super sweet beverage. add a piece of bread on the side to dip in the chocolate and you are good. :)

British hot chocolate doesn’t suck when it’s made properly. It’s just that so many cafes make it with awful over sweet syrup instead of doing it properly. Or make it with water rather than something more indulgent

Graaaaaaace, Colombia is spelled with an o, not a u! Also, I've honestly never heard of the cheese business? Granted, I grew up in the States, but hot chocolate is huge in my Colombian family and it definitely doesn't have cheese? We get these hot chocolate melting sticks and also blend it to make it nice and whipped. (Apparently before everyone had a blender, there was a special wooden tool for stirring it.)

The Colombian hot chocolate cheese is not suppose to melt all the way. You eat it with a spoon as you drink the hot chocolate. We also use a specific chocolate to make the hot chocolate, which you can find in Latino/ Colombian shops around London.

My dear Colombia isn't spelled with an U, and also, the cheese isn't supposed to melt! it's a whole experience of textures, you drink it whilst fishing some melted cheese from time to time. We usually have pastries with it for 'teatime' so it balances it out. Also it's more common to have it without clove (except for grannies!)

Hot chocolate needs cream IN the drink too, not just on top. I make ours with whole milk, cream, maple syrup and cocoa powder/chopped dark chocolate and top with whipped cream. My children adore it! Make sure you use grass fed organic milk and cream for a hotchoc that actually nourishes you too! Before we began pasteurising our dairy, hot chocolate was considered to be great for your body too.
